Cantillon Brewery

Bruocsella 1900 Grand Cru Organic Lambic Ale 2021

Vintage Lambic “which has matured for three years in oakwood barrels and has been selected for its exceptional colour, taste and flavour.”
“Powerful yet elegant, Bruocsella can be considered the missing link between the worlds of wine and beer. Since there is no secondary fermentation in the bottle Bruocsella is a flat, non-sparkling beer.”
“This aristocratic beer is to our national beer patrimony what Mouton-Rotschild, Petrus or Romanée-Conti are to the wines.”

Cantillon fills the bottom shelf of our wine cooler, but I don't have that bottle.

Fun digestif. Root beer color. Cola, ginger on nose with baking spices, root beer, and a hint of bitters on palate. Great after dinner! — 4 years ago

Brasserie Dupont

Vieille Provision Saison Dupont Belgian Farmhouse Ale

Active peach-gold and inscrutably, near opaque, with an arrogantly vaulted, whited foam tower, unblemished by human tears; clinging lacing like dish soap suds, tear raggedly to silhouettes of prehistoric headbutts. Soapy breastmilk and citrus rising on yeast, grapefruit pith peeled thinly, clover rolls just browning, and leather fringes. Lively mouthfeel as expected. Lime pith and grapefruit with papery ginger slices, orange zest, magnolia, carrot bread, straw, zucchini spirals, ginseng, and banana peel. Complex rusticity. .

Congratulations to TB12 on going to his 14th Conference Championship.

The nose shows; more macerated green & golden apple, pineapple than usual. Touch of apple cider, bruised pear, some dried apricots, nougat, melted, salted caramel, alluvial limestone minerals, chalk, sea spray, roasted white spice, dry yeast, rising bread dough, baguette crust, ginger ale with withering lilies and some spring flowers.

The palate has softer mousse & less lively acidity than previous bottles. Still nice but, it’s giving cause to wonder when this bottle was disgorged. Macerated green & golden apple, yellow peach, pineapple juice. Touch of apple cider, bruised pear, some dried apricots, nougat, melted, salted caramel, alluvial limestone minerals, grey volcanics, gritty chalkiness, sea fossils, saline, roasted white spice, nuts, dry yeast, rising bread dough, baguette crust, ginger ale that has the high notes of root beer, vanillin with withering lilies and some spring flowers. The acidity is ok but, seems off a bit. Change in base wine for this bottling? The finish still rich, elegant, well balanced persisting minutes.

Bottle is off slightly from the many others we’ve enjoyed.

Photos of; the House of Bollinger, branded cave with resting bottles, their Cooper making barrels and one of their Grand Cru vineyards.

Foradori

Fontanasanta Vigneti delle Dolomiti Manzoni Bianco 2017

Beautiful and funky Northern Italian white. Bordering on an Orange Wine. Floral, stone fruit, fresh firewood and citrus aromas and flavors. Just a hint of yeast. Almost has some “ beer-like” qualities. Loads of minerality. Ripping acidity on the very long finish. Oily/waxy texture. This beauty can age for a bit. Simply unique and extremely well made. Revisited in January of 2021. Still unique and outstanding! Notes of ginger and a bit more of an oxidized quality. Beautifully funky and complicated. Thanks Kase! Revisited again in April 2024. More austere. Yeasty notes are more baked bread-like. Ginger and honey flavors have intensified. Outstanding texture! Finish a bit short on this bottle but still delicious! — 4 years ago

Oktober-Fest Märzen

Gorgeous amber with orange evokes fine scotch. Tortoise shell lacing materializes. Orange bread and toasted sesame, Marcona almond, plantain and butternut squash pencil in the autumnal details. Poppyseed, toasty malt, allspice, acorn squash bread and a touch of ginger spice. Forgot what a seasonal treat this is!

Celebration Fresh Hop IPA 2020

Not many beers brewed like this anymore. Literally pine trees in a forest with a hint of maple syrup. I get some citrus and raw ginger, but then that sweetness cutting through followed by bitters. The bitterness is so huge but balanced. This is a beer to experience rather than slug. — 4 years ago

The Rare Barrel

Impossible Soul Golden Sour Beer 2015

Age is a marvelous thing for these sour beers. So complex. Lemons, but different types of lemons, some creaminess, definitely cherries but much more subdued and more dried. Tons of funk with not a ton of Brett which I had been expecting from these earlier days of TRB. Also some honey and grape must. I actually thought of cognac while contemplating the finish. — 4 years ago

"K" Alsace Pinot Gris 2016

this bottle takes me back to Alsace.
i spent a weekend in Strasbourg in 2006 protesting/partying in front of the European parliament that's located there.
no wine was tasted as i sticked to self imported bottle of zubrowka vodka, drops of potent LSD (that were dropped to the tail end of the vodka by a really short vicious smiling man - true story) and local pilsner beer that i remember fondly that's called 'meteor' and came in large 750ml bottles(pretty good ice cold and just ok after the sun warmed up the last 3rd of the bottle).

and now... 13 years later. different tastebuds. but I'm still the same person essentially.

100% pinot gris

off dry officially but feels dry.

14% ABV

pale green 👀

🧀 rind, green apple, pear, very fresh lemon and finely chopped greens👃

full body. I'm guessing the rs helps to build it.
medium plus acidity.

creamy, tart and a bit fruity with added white pepper and maybe even ginger 👄

long lingering pleasent creamy 🎯 like tasty and slightly bitter 🍬

great wine, no doubt about it.
tasty and complex, plays with you and changes every sip, but always superb.

excelent vfm (110 nis). expensive but works hard for your money.

need to try the winery Riesling now.

had it all day on it's own while vacationing.
soft and spicy cheese platter could have helped but I'm too full.
