Perfect sheet of fog lacing falls like a slo-mo curtain to reveal layer two of mountain snows reflecting moonlight. Nose of bananas foster in all its blazing brandy and it’s caramelized olfactory topography; a malt image in sensory sepia to match the mountainscape. Nutmeg, cola and pecan dessert vies with baklava. The palate is a revelation in balance. Vieille Provision Saison Dupont Belgian Farmhouse Ale

Active peach-gold and inscrutably, near opaque, with an arrogantly vaulted, whited foam tower, unblemished by human tears; clinging lacing like dish soap suds, tear raggedly to silhouettes of prehistoric headbutts. Soapy breastmilk and citrus rising on yeast, grapefruit pith peeled thinly, clover rolls just browning, and leather fringes. Lively mouthfeel as expected. Lime pith and grapefruit with papery ginger slices, orange zest, magnolia, carrot bread, straw, zucchini spirals, ginseng, and banana peel. Complex rusticity. .

Prior 8 Belgian Abbey Ale Beer

Maduro brown with mahogany polish; solid cap of varying creams. Low-helium balloon, slow drop lacing bejeweled like lively paramecia. There is a sweet cola entry which builds malt and date and brown sugar scope, adding vanilla bean and cocoa. Chewed leather, candied ginger, waterlogged ginseng, almond, pecan, chestnut and bourbon notes. Lighter-than-anticipated mouthfeel expresses tea versus cola implied, but leaves you ruminating on it’s perfection, which is somehow like dark toasted phyllo brushed with maple living like a wafer inside of a bonbon biosphere. Several roots are prominent; sassafras, ginger, man back, and glazed, roasted carrots. There is an overshadowing of coffee, though thin, and carob. The malt prevails, to plant the Belgian flag. Tastes of gritty, rustic elements, but flows like fine silks. Bravo! .

Christmas Belgian Abbey Ale

Quick! The wise men are coming! This big dog is barreling down the slope of my noodle toward the sterudel. Feels sour in a lot of ways, with a bitters and sarsparilla ‘zing’ but a solidly malty, Belgian core that resonates with its own dark, grainy brown sugar and cola synergy, and a roobios, cinnamon, baked apple, tea leaf, and cedar finish. Trappistes Rochefort 10 Quadrupel Ale

All the essentials. Hope these monks blessed the devil out of this! Gorgeous auburn brown that looks as rich as fresh tilled, valley loam. This head don’t quit! Cappuccino foam with variations. Sheeted micro-weave of bubbles in the lacing that part like thick lips, as if to say, ‘ahhh.’ A touch of baked marshmallow-on-yam. Coffee rye, barley grist, malt and grilled meat interplay, twice baked potatoes with bacon, sour cream and chives. Caramel drizzle. Dark honey glazed sourdough toast. Blood orange squeezed onto fondue, baked, mushroom stuffed persimmon. Heady, rustic, decadent nose invites us to a feast. Intense finesse! So multi-layered they had to fold it into the bottle! There is a cognac barrel aspect that has a cedar and oregano intertwined in an aged balsamic depth. Bark-y and chicory but also resembling petite verdot in its unctuous and integral core. Cherrywood and rich, dark maduro tobacco. The list could literally go on forever.
