Lovely Thivin. So clearly Beaujolais from the nose which carries through the palate. Decanted 6 hours which I’d suggest at this stage. Lacking just a hint of that acid driven refreshing note on the finish. Still delicious and a great pairing with roast chicken with mushrooms to herald the (near) arrival of fall. — 8 months ago

Fords London Dry Gin

Straw and grass cuttings combine with wildflowers to vie with juniper. Dried coconut and ripe pineapple slices herald tropical lemon and lime and ginger snaps with a lychee surprise that includes dill lemongrass and sassafras. Lemon oil and dilute lime unfold to expose pine and imposing juniper, sweet basil and a textural mint sensation. Prickly neat, but add a cube and voila! instant roundness and integration of parts bordering on perfection. Medicinal in feeling only; lingering and potent. Light on the tonic, and if you must garnish, I suggest a small wedge of lime or cucumber, otherwise it is a botanical delight. Healing anyone?

Lavender Black Currant Hard Cider

New label, one of their Botanical ciders; black currant and lavender flowers added. Light head in pour, some carbonation, pinpoint bubbles - wow! Black currant aroma dominates in nose, an explosion of floral and fruit flavors in mouth. Round mouthfeel, good malic (apple) crispness, dry but fruity; it’s the slightly tart black currant goodness that lingers, rolling around the palate. The botanical additions herald an even better cider- great stuff. — 6 years ago

Sour buttermilk, boiled potato, clotted cream, crimini mushroom and Parmesan herald a funky-earthy scent made pleasant by maple sap, pickled peach, underripe apricot, and coriander. Apple cider vinegar bursts into the palate with wincing alacrity, which, with goat cheese becomes a bright tangerine and near-ripe apricot. Still has a pickled note. Pickled yellow pepper, onion, red bell and general chow chow diciness, as well as a sauerkraut and sweet mustard combo. Razzy, jazzy and bracing. Stellar example of the lambic style. .

Very special hand-crafted and unique Rosé, elegant, made with Sonoma Chardonnay (98%) adding a kiss of Rutherford Bench Napa Cabernet Sauvignon (2%), and in my opinion far better than the Rosé that herald from southeastern France where some of the best are produced. I have never tasted anything like this previously. Small production, grapes fermented and aged from French white oak wood staves from Allier, Nevers and Tronçais Haute Futaie forests, known for their sought after wood, with tighter grains. Stunning deep orange/salmon color with exceptional depth of fruit brought out by the small amount of Cabernet Sauvignon providing a beautiful fruit/floral character. On the palate layers of subtle extraordinary rich fruit, ripe melon pear with a hint of raspberry and citrus adding vanilla and very light subtle toasty oak, luxurious with a graceful savory freshness. Very well balanced, layered with elegance and persistent length with an ending that comes back with fruit and vanilla spice adding some minerality. Truly outstanding, will continue to improve if you decide to cellar a bit! For me, hard to resist drinking now! Grab a few bottles and give one to your Mother for a special day, before they are gone!
