OMG 2017 Chablis, what a vintage you are!!
Nose has slightly grassy notes, sweet pineapple core and wet, crushed limestone.
Palate has very zingy lime, lime flesh, tart green apple, lemon peel and drying mineral dust. Medium-long finish.
Decanted only about 30m, more time needed.
We're enjoying our first fire in the chimenea on this cool late summer evening, just one of many to come the rest of the year.
24 Hour Update: Acidity has subsided, wet limestone is more prominent, pineapple notes are more core and less sweetness today. I knew this just needed more time to come around, fantastic. — 5 days ago
