Chablis Premier Cru Foret 1995

Opened about 30min prior to service. The 1995 Fôret pours a deep straw with medium viscosity. On the nose, the wine is vinous with notes of dried tropical fruits, dried orange, white flowers, honey, nuts, and some warm spices. On the palate, the wine is dry with medium+ acid. Confirming the notes from the nose. The finish is long and leesy with that Chablisienne creaminess. Lovely. Drink now through 2035. — 21 hours ago

Premier Grand Cru Classé Pauillac Red Bordeaux Blend 1995

Medium deep garnet ruby with a narrow garnet rim . Dusty grafite , cedar and cassis , currants , oyster shell , quite deep and classic . On the palate this is quite dense and tannic still , deep dark cassis , herbal tinged cedar and very grafite tinged on the finish . Fresh acidity , but still good mid palate richness and even though the tannins are quite dry and grippy , this is well balanced and relatively generous . Good length on the classic grafite , oyster shell tinged finish. This didn’t need a lot of decanting time to show well , though it certainly changes and improves with time in the glass . Classic in style , but still quite generous for Latour , this is just reaching its drinking window , will continue at this level for another 5-10 years at least and probably more. — 12 days ago

Premier Grand Cru Classé Graves Red Bordeaux Blend 2005

Tasted blind. Pretty similar to 2 in colour , more garnet core , some ruby with a garnet rim . Slightly more closed on the nose , touch of spice , hickory , then dark fruits , grafite . On the palate this is more mineral and intense , with good volume and a ripe layer of dark fruits , quite rich and mouthfilling but with good freshness and length . Lots of cassis and grafite , some cedar , grippy tannins . Dense and quite powerful long finish . This has a lovely spiced character with an earthy finish . Still pretty young , needs a little more time , but great balance . Wait Another 5 -8 years and will last well a further 10-15. I did not put this as HB in the 30 minutes we had to study the wines , the sweet spice took me over to Mouton , with more time it was obviously so different , so I kicked myself when it was revealed as HB. My 4th placed wine . — 4 months ago

A developing Margaux showing early aromatic charm and layered complexity, with youthful structure and noticeable oak integration that will benefit from short-term aging.

Aromas & Flavors
Red cherry, raspberry compote, wild strawberry, subtle vanilla pod, sweet baking spice, light cedar, emerging floral tones and faint graphite.

Mouthfeel
Medium-bodied with tight but refined tannins, good mid-palate tension, clean line of acidity, and a structured finish that signals further evolution ahead.

Food Pairings
Duck breast, herb-crusted lamb rack, porcini risotto, roasted chicken with thyme, aged Gruyère.

Verdict
Already expressive and layered, but still in its formative phase. A couple more years will soften the tannins, integrate the oak, and elevate aromatic precision and depth.

Phenomenal. Every other year I open one of these bottles from 2016 and the evolution keeps impressing me. On the nose, has a character of rainy ancient west coast forest. On the palate, Blackberry, blueberry, with hints of dark cherry. Blended perfectly with a rich, aged, leather. Hints of cedar wood, slightly smoked. Perfectly balanced.
