From Paul Lato, the 2018 is 80% syrah and 20% grenache. Really closed out of the gate and never really opened up over the course of an hour or two in the glass, we put the cork back in and put it in the fridge. Tried it again after a couple of days. Unbelievable difference - really terrific. I’d suggest a multi-hour decant on this one or forget about it for a couple of years. Aged for 14 months in 50% new French oak, aromas of stone and citrus fruits with notes of smoke and fresh oven biscuits. On the palate flavors of ripe apple and pear, lime citrus with notes of smoke and cedar, well integrated, balanced acidity, long rich finish, ending with fruit and delicate yeasty notes. Very nice. This night the wine that has been opened is the 2019 Domaine Paul Cherrier Sancerre Sauvignon Blanc from Verdigny, France just north of Sancerre in the Loire Valley.
The nose I am getting lime, green apple, pineapple, hibiscus and a good mineral limestone note.
On the palate there is lime, grapefruit, white peach, pear, a bit of saline, mineral notes and wet stone.
