Dogfish Head Brewery

75 Minute IPA

Red gold body with a Matisse sketched white ring and merengue peaked, sheet-lacing. Clean citrus nose exhibiting clementine and dried pineapple, Meyer lemon and a faint funky-persimmon and lotus. There is something pleasant about the naturalness of the aromatics here with dried lemon verbena and Calloway seed. Orange and tangerine eclipse the lemon on the palate and add sweet grapefruit, and a clove note that tightly binds the whole. The bitterness being mitigated by the maple was brilliant here! Makes the Dogfish 90 seem clunky in comparison. I am a fan of this manifestation. Careful crafting and a simple solution to tune aggressive hops. There is no maple flavor btw. .

Eclipse Grenache Blend 2013

Popped and poured into a decanter about 90min prior to service. The 2013 Eclipse pours a deep ruby with a transparent core; medium+ viscosity with faint staining of the tears. On the nose, the wine is developing with red and black brambles, leather, black pepper and other spices. On the palate, the wine is dry with medium tannin and medium+ acid. Confirming the notes from the nose. The finish is long and hard to hate on. Yes, it is an enormous wine and yet, somehow balanced at 16%. To this day, the wines from Noon remain elusive. Nicely done. I like the Amphora texture and acidity. Queveri-ish. Good food wine. For on its own enjoyment, would love to see lightly topped with late harvest Roussanne. Lemon+Honey 🐝





I also want to bury the Amphora ceremoniously, with you (Bradley) and Randall Grahm.... on an eclipse/lunar biodynamic magical night, you already got the patio with a firepit to fulfill the bonfire... cow horns and crystals for everyone :) haha
