Picking up a juiced pear on the nose today, but otherwise prior notes still apply:
Nose has ripe yellow apple, lightly oxidized green apple peel, baked phyllo dough, partially aromatic white flowers and damp rocks. I always get a natural wine vibe here, without the vinegar-like profile, but it seems alive!
Palate has baked green and yellow apple pastry, crisp acidity yet dense, candle wax begins on the finish and ends with dry granite. Great balance, very lengthy finish, clean and not cumbersome, superb vintage, long life ahead. We love you Jean-Jacques. — a day ago
Great density on the palate that remains focused. Very seamless across the palate, with oak, acid, tannin, and alcohol all in balance. Classy but still has a wholesome nature to it. Beautiful aromas and flavors of cooked mulberry, blackberry jam, charred meat, pastille, bacon, cedar, bitter roots, graphite, woodsmoke. Drinking great right now — 4 days ago
A brilliant value and brilliant bottle of Chablis. Wide open. What a nose. Deep mineral. Lime pith. Airy. Saline. Seashells. Palate is nervous and tensile with great purity and texture. Almost no fruit. Salty. Good structure and acidity. Such snap, sap and length on this wine. Amazingly well made. Easily 1er Cru quality. So juicy, so dense, so pure. Brilliant. — 12 days ago
Two of the very best dishes we had in recent memory. Food a 9.8. Wine pairing a 10.
Absolutely the best @Plate&Bottle Dinner we attended. Spectacular evening.
Thanks to Chef Hedy who talents in the kitchen need to experienced by all. We’ve been to many Michelin stared restaurants all over the world and not had food as delicious as Hedy’s. — 5 hours ago
