Ube de Ubérrima Miraflores Palomino Fino 2021

2024 vintage.
Definitely for acidity fans.
We took a quick turn from Montilla-Moriles a couple nights ago ( Oloroso) to Sanlúcar ( heck, it shot up to 78° here). With fried fresh fish, a nice palate cleansing quaffer(11.5°)Seashore, Salinity, Granny smith’s, chalky as the soil. Not the most complex drink but we’re not asking. What these wines provide is a glimpse into a lost ( becoming revived) world of the “ Sherry Triangle “, and the over 100 grape varieties that were lost to commerce and the sweet Sherry trade. We’re drinking table wine as if we were there in the mid 1800’s. It’s nice to have winemakers such as Ramiro Ibáñez working to restore some of what was lost.
2 days later it’s a fine, more rounded quaff. The sharp edges gone, and therefore the impression of depth increased. Nice showing.

Blend of different types of Palomino (Palomino Fino, Palomino Jerez and Palomino Pelusón) from a single vineyard within the Pago de Carrascal, in Sanlúcar (not to be confused with the eponymous Carrascal in Jerez, further inland). Located to the south of Miraflores, this is one of the most Atlantic influenced Pagos in Sanlucar, and also one of the first to be replanted after phylloxera – with vines over 100+ years old. Verdict
A beautifully tuned balance between accessibility and sophistication. The wine shows clarity of fruit, finesse of structure, and immediate pleasure without sacrificing complexity, a modern, confident Saint-Émilion expression.

This is pure driving joy, confident lines through the corners but relaxed enough to enjoy the scenery. Slightly juicy, deliciously drinkable, and dangerously charming, it’s the kind of bottle that disappears faster than expected while still leaving a serious impression.
