👅This is a great summer champagne and it combines crisp flavors with a touch of oxidation and solid minerality.
Honey crisp apple, even cider, and bruised apples are featured. Quite powerful personality. Lemon peel sweeps the palate clean on the finish.

👃Traditional barolo notes of tar, roses, maraschinos, cigar box, cedar, smoke... Love this
👅Same flavors but slightly restrained. Dark cherries and smoke. Light sweetness. Good brightness and acidity. Soft silky tannins. Sharp yet clean on the dry finish
Refrigerated and "Slow Decanted" the remaining wine for 10 days with nitrogen protection
DAY 10
👃Cherries and cherry liquer, tar, cedar, smoke, florals and earth. Classic
👅Cherry and strawberry, fresh tobacco notes, smoke, and cedar all blend seamlessly from start to finish. Silky texture with some tannic grip on the finish. (Not as much time in the glass vs day 1) The Ginestra is interesting, flavorful, and easy drinking
The wine was slightly more expressive and relaxed on Day 10.
This is really good barolo at 15 years and the color and flavors are showing relatively youthful.

Biscuit, butter, lanolin, honey, & florals. Bold & elegant
👅Quite vinous champagne. Enough substance, backbone, & flavor to deliver a great drink. Fruit from start to the long finish: Apples, lemon, orange liquer, & pastry
Great with an aged gouda and a robusto 🧀
Solid performer at 22 years from a champagne vintage without laurels. Bravo! 🥂🍾

Served this beauty on 2 occasions with Vinloq Preservation
DAY 1
👃Precocious yellow fruit (grapefruit and lemon) and green apples, flinty minerals, white pepper, and grassy herbals
👅Lemon oil with white pepper and spirited minerality. The fruit is more round and more restrained than on the nose.
Salty. Great acidity. The oak treatment is spot on. Long dry, mineral laced finish. So good
The remaining wine was Slow Decanted in my refrigerator and finished a week later
DAY 7
Such a glorious nose on this burgundy. Really delightful. White flowers and peach and even some tropical fruit notes. Flinty and expressive. Totally lovely on both occasions
I knew this was likely young but I was curious to try my first bottle. It's clearly drinking well now but it's going to be stellar with more bottle age.
I am looking forward to revisiting another bottle in time🥂

👃Iodine, seawater, a touch of oxidation, and salty minerality
👅Brine leads the way with iodine, nuts, herbal notes, and other flavors that are hard to pin down but are enjoyable.
These flavors lead to some bitterness before the very long and enjoyable finish. This is full bodied and amazing
The remaining wine was Slow Decanted in my refrigerator
I returned to this wine multiple times over the following weeks. My experience was similar each time
DAY 20
Same aromas, flavors and intensities as day 1. So rich and resonant. The finish is deep, mineral laced, seawater, nuts & herbals. No signs of fruit. Extremely long finish
That a sherry aged under biologically active flora stays fresh for days & weeks is not surprising. But I still protect them because it is not a wine that I prefer in large servings. Rather, I enjoy a small glass frequently. They are super food friendly and a perfect match with many foods including aged cheeses, cured hams, and even sushi. Also superb in the correct cocktail

"Slow Decanting" this young spatlese over a couple of weeks with the Vinloq System
DAY 1
👃Careens from the chilled bottle with limes and apples plus minerality & petrol
👅Sweetness leads. Fruit, florals and acidity follow. The minerality is there for the finish. The acidity is fresh and palate cleaning. Lip smacking, if you will
The remaining wine was Slow Decanted for 18 days in my refrigerator
DAY 18
This hasn't budged during the interim. Apple, peach, pear with lime on the finish. The standard hallmarks of Falkenstein are present with the extra midpalate density seen in so many 2019
German riesling. Classy. Fresh. Clean
This 2019 is just getting started. It is delicious in this youthful, energetic state. I cannot wait to see where this goes as it develops over time in the cellar.

👃This was bold and definitive on the first pour before it had even warmed. Excellent slatey minerality with lime, peach and white pepper
👅A totally stuffed midpalate of juicy fruit, nicely complemented with both herbals and white florals. There is significant sweetness (and baby fat) but it retains crispness and great minerality
The remaining wine was Slow Decanted and preserved with Vinlog nitrogen in my refrigerator
DAY 13
Spot on vs Day 1 with maybe some additional energy and fireworks.
What a stellar wine! The flavor profile here is delicious. The main elements are peach, apricot, citrus, minerality, herbals and honey. They last all the way through the lengthy finish.
It's a flavor explosion but the wine retains impressive precision and clarity
This 2020 should make from a long lived wine and will likely be fantastic at every stage

👃Very expressive nose with nice interplay between the predominant minerality and the brioche, strawberries, marzipan, and florals
👅A rich and assertive profile with plenty of acidity and crisp bubbles that deliver energy and joy. It is both assertive and pretty. Just the right amount of sweetness keeps the fruit fresh and delicious. Long finish. Great with food or easily has enough verve to drink on it's own.
Drinking well. Excellent value for a rose from a major Champagne house🥂🥂

DAY 1
👃After hours in the glass, this is rich with spicy dark fruit, chalk/graphite/smoke, cedar, vanilla, and anise. Classic Cali Cabernet: Rich & sexy
👅Beautiful, luscious sweet fruit with just the right balance of oak and soft tannic notes. A bit of spice & herbals with clove and vanilla. Silky texture. Plenty of acidity keeping this fresh
Refrigerated and "Slow Decanted" the remaining wine for 8 days with nitrogen protection
DAY 8
👃Perfumed with dusty spice and fruit. Oak notes in the background. Rich and classic
👅The dark fruit (black currants and blackberries) leads and the spicy notes follow.
Oak accents are there on the balanced, long, and delicious finish. Drinking very well. Similar to Day 1 though it seems slightly sweeter today
This 2010 R-M Panek is definitely in the zone. It has richness and the fruit is sweet but not ponderous or cloying. Polished. No heat. Drinking beautifully. Drank this in the mid to upper 60'sF (18C) temperature

Nice color. No real sediment, just a touch cloudy on the last pour. Let this aerate in my glass for 4 hours before drinking
👃Red fruit but especially pretty with roses, dried fruit, tea, tar, and menthol. Just beautiful
👅Red cherry and blue fruit, tar, earth, mushroom, tea and herbs. Some tannic grip remains but this is silky. The finish is quite long with a touch of acidic bitterness. A bit of volatile acidity in the form of acetone, but not really distracting. Medium body. Composed and elegant.
