Nice color. No real sediment, just a touch cloudy on the last pour. Let this aerate in my glass for 4 hours before drinking

👃Red fruit but especially pretty with roses, dried fruit, tea, tar, and menthol. Just beautiful

👅Red cherry and blue fruit, tar, earth, mushroom, tea and herbs. Some tannic grip remains but this is silky. The finish is quite long with a touch of acidic bitterness. A bit of volatile acidity in the form of acetone, but not really distracting. Medium body. Composed and elegant.

Such a treat to share this legend with great friends. Sorry Vinloq, there was nothing to save as this was happily emptied🍷🍷

DAY 1
👃After hours in the glass, this is rich with spicy dark fruit, chalk/graphite/smoke, cedar, vanilla, and anise. Classic Cali Cabernet: Rich & sexy
👅Beautiful, luscious sweet fruit with just the right balance of oak and soft tannic notes. A bit of spice & herbals with clove and vanilla. Silky texture. Plenty of acidity keeping this fresh

Refrigerated and "Slow Decanted" the remaining wine for 8 days with nitrogen protection

DAY 8
👃Perfumed with dusty spice and fruit. Oak notes in the background. Rich and classic
👅The dark fruit (black currants and blackberries) leads and the spicy notes follow.
Oak accents are there on the balanced, long, and delicious finish. Drinking very well. Similar to Day 1 though it seems slightly sweeter today

This 2010 R-M Panek is definitely in the zone. It has richness and the fruit is sweet but not ponderous or cloying. Polished. No heat. Drinking beautifully. Drank this in the mid to upper 60'sF (18C) temperature

Let's "Slow Decant" this German kabinett for two weeks

DAY 1
👃A definite attention grabber with apples, oranges, pears, smoke, minerals, white florals and mint. Whoa!
👅Loaded but never weighty. The sweet fruit is also rich and tangy. Limes and oranges. Good acidity and a gracious midpalate. A total joy to drink

Let the remaining wine Slow Decant in my refrigerator for two weeks

DAY 14
👃Rocky minerals dominate and are complemented by white florals, ripe orange/ apples. A touch of musk. Lots going on🙌
👅Sweet fruit like apples, li mes, and oranges with minerals. Slightly creamy. Very solid midpalate and proper kabinett sweetness

This Klostergarten Kabinett is great now and it's going to be greater as it should reward lots of cellar time👍

Every bottle of Lukas Hammelmann wine that I open impresses me greatly. He is making wines that deserve your attention. He has mine👏

Biscuit, butter, lanolin, honey, & florals. Bold & elegant

👅Quite vinous champagne. Enough substance, backbone, & flavor to deliver a great drink. Fruit from start to the long finish: Apples, lemon, orange liquer, & pastry

Great with an aged gouda and a robusto 🧀

Solid performer at 22 years from a champagne vintage without laurels. Bravo! 🥂🍾

Served this beauty on 2 occasions with Vinloq Preservation

DAY 1
👃Precocious yellow fruit (grapefruit and lemon) and green apples, flinty minerals, white pepper, and grassy herbals
👅Lemon oil with white pepper and spirited minerality. The fruit is more round and more restrained than on the nose.
Salty. Great acidity. The oak treatment is spot on. Long dry, mineral laced finish. So good

The remaining wine was Slow Decanted in my refrigerator and finished a week later

DAY 7
Such a glorious nose on this burgundy. Really delightful. White flowers and peach and even some tropical fruit notes. Flinty and expressive. Totally lovely on both occasions

I knew this was likely young but I was curious to try my first bottle. It's clearly drinking well now but it's going to be stellar with more bottle age.
I am looking forward to revisiting another bottle in time🥂

11 Days of “Slow Decanting” this classically styled Chateauneuf du Pape

Le Vieux Donion is one of the more traditional estates in CdP. They make a single wine each vintage from their 14 hectares of organically farmed fruit. Grenache is the major grape with Syrah and Mourvedre in blending roles

DAY 1
Served with the Vinloq System
👃Perfumed, ripe blackberry and plums with deep earthy notes of soil mixed with dusty cellar and a potato note. Oak signatures like vanilla and cedar mesh well with this classic styled Southern Rhone. Pretty stunning right away
👅Plummy dark fruit, kirsch, licorice, and game.
Juicy. Oak influences and a touch of prune. A little warmth from the 14% alcohol lead into an extended finish. Good acidity. More refined than rustic

The remaining wine was "Slow Decanted" in my refrigerator

DAY 11
👃This is sweet with ripe, dark fruit and kirsch.
Yes, that cut potato note is there again but it does not detract. There is a bit of spice and dustiness
👅Full bodied and earthy with dark fruit. Silky texture. The tannins have mostly resolved with a little grip on the finish. Based on this bottle, this wine still has time. It is drinking very well but it shows no signs of a downturn anytime soon

I seem to generally prefer CdP wines shortly after pouring rather than letting them breathe in the glass(or decanter). That was true with this Donjon on both occasions. However, Slow Decanting the wine for 11 days did not change my enjoyment of the wine vs Day 1 🍷🍷

"Slow Decanting" this young spatlese over a couple of weeks with the Vinloq System

DAY 1
👃Careens from the chilled bottle with limes and apples plus minerality & petrol
👅Sweetness leads. Fruit, florals and acidity follow. The minerality is there for the finish. The acidity is fresh and palate cleaning. Lip smacking, if you will

The remaining wine was Slow Decanted for 18 days in my refrigerator

DAY 18
This hasn't budged during the interim. Apple, peach, pear with lime on the finish. The standard hallmarks of Falkenstein are present with the extra midpalate density seen in so many 2019
German riesling. Classy. Fresh. Clean

This 2019 is just getting started. It is delicious in this youthful, energetic state. I cannot wait to see where this goes as it develops over time in the cellar.

The Vinloq System was designed to be used on still wines only. However, sparkling wines are amazing

👅This is a great summer champagne and it combines crisp flavors with a touch of oxidation and solid minerality.
Honey crisp apple, even cider, and bruised apples are featured. Quite powerful personality. Lemon peel sweeps the palate clean on the finish.
Develops some creaminess as it warms

Let’s see how this Ohligsberg Spatlese changes during 2 weeks of Vinloq “Slow Decanting”

DAY 1
👃Minerals wet with rain, light musky fruit, sweet white florals, light honey & petrol. There is complexity here. The minerality & petrol get stronger when agitating the wine
👅Where to start? Petrol, lychee, orange blossom honey, creamy lemon sorbet. The sweetness level is light compared to many spatlese. This is superb. Beautiful. Delicious.
Savory. Mineral. Crisp acidity. Long finish. It rewarded several hours in my glass

The remaining wine Slow Decanted in my refrigerator for 14 days

DAY 14
👃Minerals and bright, crisp fruit. Some herbals.
This is silky with some lovely roundness.
Requires a little coaxing when cool
👅Sweet candied fruit with smoky minerals and herbs. After warming some peach and mango arrive. Juicy. Solid acidity. A joy to drink. Such great balance that it shows well at warmer temperatures than I would enjoy with many riesling

Once again, this rewarded significant time in the glass. That is something that catches me off guard with Slow Decanted wines: despite being opened for some time, they still may need significant air to open up just as they did on Day 1
And, yes, this was excellent on Days 1 and 14

The 15 Ohligsberg seems to have another gear in reserve. I look forward to following my remaining bottles for many years 🥂

DAY 1
👃Cherry fruit with cedar, tobacco and sweet florals
👅Soft texture with bright acids. Earthy with clay, spices, and herbals leading to perfumed red fruit, plums, leather and tobacco. Significant finishing length and soft, slightly dry tannins

DAY 11
👃Glorious ripe, red fruit and plums plus vanilla, cedar and fresh tobacco
👅The silky, plush mouthfeel from the sweet fruit makes this really easy to drink. The fruit meshes beautifully with the oak notes and structure.
In a solid spot but should continue to improve as the tannins further resolve

This rioja kept its traditional character despite the warm 06 vintage
