Neat how with age this turns into a dill monster but young it’s fresh and tons of apple, pear, and maybe some saline — a month ago
Orange blossom and the slightest touch of residual sugar to balance out the razor sharp acidity (and balance out my spicy Thai food). This is a light wine but I can almost taste the slate soils and steep slopes.
Whole-cluster grapes and spontaneous fermentations

vineyard work: All vineyard work is done by hand due to the incline of the vineyards. Absolutely no use of insecticides/pesticides or
fertilizers; the work is completely organic but not certified as such because Florian refuses to spray copper on the vines. — 3 months ago
Medium light straw . Wet slate and chalky on the nose , with white flowers , touch of gunpowder and a lychee note . On the plate more white fruits , white peach , touch of lychee and ripe apple, with a light smoky touch . Nicely rounded mouthfeel with balanced alcohol . Slightly saline finish , with good acidity . Ok length . Showing pretty young at the moment , this will be better in a couple of years and last well a further 5-8 — 7 months ago
2019. We wanted something easy for dinner since my flights in were delayed a bit, so take out sushi it is. Had a bottle of Garganega in the fridge that I bought on discount on a whim when I was back a few months ago, but thought a bottle of Riesling may be good too. I loved this petrol and tropical fruit rich wine with the spicier maki and on its own. — 6 months ago

The pairing with tuna crudo, with ponzu, shiso, and pear is amazing. — 22 days ago
