Redemption Organic Vineyard Cabernet Sauvignon–Merlot 2016

Redemption Organic Vineyard Cabernet Sauvignon–Merlot 2016 – Judean Hills, Israel 🇮🇱

Overview
A beautifully mature red blend of Cabernet Sauvignon 60% and Merlot 40% from organic vineyards in the Judean Hills, delivering layered complexity, polish, and remarkable balance at ten years of age. Aged in French oak, the wine shows depth without heaviness, with seamless integration of fruit, tannin, and savory nuance. Elegant yet commanding, this is a wine that speaks clearly of site, thoughtful farming, and patient evolution.

Aromas & Flavors
Ripe red and dark cherry, plum compote, dried raspberry, subtle vanilla, cedar, warm spice, and gentle earth tones. Secondary notes of leather, tobacco leaf, and savory herbs emerge with air, adding dimension and intrigue. The fruit remains vivid and fresh despite the wine’s age.

Mouthfeel
Silky and refined with a beautiful mid-palate glide. Tannins are long, polished, and finely textured, supporting the wine without grip or heaviness. Excellent balance between freshness, richness, and structure. The finish is persistent, elegant, and quietly powerful.

Food Pairings
Roasted lamb, grilled ribeye, braised short ribs, mushroom risotto, aged Manchego or Comté, herb-roasted chicken, and slow-cooked Mediterranean dishes. Also shines beautifully on its own as a contemplative glass.

🍷 Personal Pick
This is serious wine, graceful, poised, and deeply satisfying. The kind of bottle that literally dances across the palate with finesse and confidence, making each sip more compelling than the last. Silky, layered, and utterly polished, it commands attention without ever shouting. Worth every penny and absolutely cellar-worthy, yet drinking beautifully right now.

Did You Know?
Redemption comes from organically farmed vineyards in the Judean Hills, one of Israel’s highest-elevation wine regions, benefiting from cool nights and strong diurnal shifts. The winery was among the early adopters of organic viticulture in Israel, contributing to the wine’s purity, balance, and expressive terroir character.

These are really good. After the last 3-years, I gave up my allocation to a buddy. At $330/bottle all in, it adds up quickly.

Côtes de Nuits-Village Pinot Noir 2017

Gift card redemption on a rare Sunday evening out. Reasonably priced tasting menu and wine list — and all was delightful. All courses were quite nice, especially the ochazuke and “forest floor” dessert. The wine: light, flavorful, and very easy to drink. Would buy. — 3 years ago

Le Mont Benoit Extra Brut Pinot Meunier Blend 2018

A worthy redemption to my abysmal wine run in 2023! LC18. So delicious. Once more, I reckon WK nailed the tasting notes here, “Offering up inviting aromas of crisp orchard fruit, blanched almonds, honeycomb, walnuts and fenugreek, it's medium to full-bodied, concentrated and precise, with a fine-boned but intensely flavored profile, complemented by a beautiful pinpoint mousse. Brochet is the master of intensity without weight, and this wine exemplifies that.” Awe-inspiring salinity too if I had to add anything to WK’s notes. Super wine! — 3 years ago

Redemption for a underperforming bottle from our last go at this 1992. If you're buying old wine and didn't anticipate bottle variation, you need to know that's just part of the game. This bottle is fantastic.
(Enjoying alongside the '88 again today, no slouch on that bottle!)

On the Lawn at Tanglewood this afternoon with the Boston Symphony Orchestra. Our conductor Andris Nelsons is leading Sarah KIRKLAND SNIDER (Forward into Light; BSO Premiere), PROKOFIEV (Violin Concerto No. 2 in G Minor, Opus 63) and DVOŘÁK (Symphony No. 7 in D Minor, Opus 70).

Our soloist today Augustin Hadelich rounds out the program with Prokofiev’s intense Violin Concerto No. 2, and Andris Nelsons leads the BSO in Dvořák’s Symphony No. 7 – sometimes called the composer's greatest symphony.
