Key lime soda and white peach. Steely vibrations with pop sparkle. — 3 months ago
Pear, lemon, lemon curd. Cloudy, acidic and yet lactic and soft. A tad touch of minerality on the finish with hints of calcium. Tiny bubbles but lively enough. Really dig this one. — 2 years ago
"Slow Decanting" this young spatlese over a couple of weeks with the Vinloq System
DAY 1
👃Careens from the chilled bottle with limes and apples plus minerality & petrol
👅Sweetness leads. Fruit, florals and acidity follow. The minerality is there for the finish. The acidity is fresh and palate cleaning. Lip smacking, if you will
The remaining wine was Slow Decanted for 18 days in my refrigerator
DAY 18
This hasn't budged during the interim. Apple, peach, pear with lime on the finish. The standard hallmarks of Falkenstein are present with the extra midpalate density seen in so many 2019
German riesling. Classy. Fresh. Clean
This 2019 is just getting started. It is delicious in this youthful, energetic state. I cannot wait to see where this goes as it develops over time in the cellar.

Solid dry Mosel Spatlese Riesling. Balanced citrus, slate, and petrol aromas. Heavy mouth feel. Not as complex as others I've had recently, but I'm biased having sampled many reserve and Alsatian grand crus. — 5 months ago
Round 2 / this time with a selection of cheeses.
Lemongrass, pandan leaf, white cherries.
Zesty comes to mind. Straight up Asian pair. The crispness of fresh forest air. Savory, fine bubbles of tropical fruit. Lychee and mango but subtle and cut with the nice welcome dryness of biting into a freshly picked apple — 2 years ago
Sweet as a birthday boi — 3 months ago
Slightly sweeter than off-dry but with such purity & balance. And the lightness is sublime.
White peaches & lime on the front with labor sharp acidity cutting through and finishing off on a stony, rocky mineral note with a hint of salinity.
This is mouthwatering delicious and begs for (yet) another sip. Simply made for terrace sipping!
