This wine gives a pale golden color in the glass. The nose is more subdued than I expected. There is lemon, mango, almond, and minerality available to smell. The palate is more forceful, and a delight besides. Citrus minerals are joined by salinity and a racy acidity, which begs for a food pairing. Clear, deep ruby in color; on the nose, it's clean with pronounced primary and secondary aromas of blackberries, cassis, and graphite; on the palate; it's dry with high acidity, high tannins, high alcohol, full body, and pronounced primary and secondary flavors of black plum, black cherries, and black cardamom with a long finish. The delicious, smoothly textured, 2021 Justin Cabernet Sauvignon (Paso Robles) is intensely colored, nicely balanced, and well structured; medium>full, with an abundance of aromatic and flavorsome black fruits (Bing cherry, blackberry); refined with barrel aging notes (spice, vanilla, toast); and framed with medium acidity and smooth tannins at the mouth cleansing finish. 1994 vintage. Popped, decanted and filtered and tasted immediately. Opened six decades too early. The whole crushed violets and plummy thang definitely there alongside hints of sweet tobacco in her breath. With apologies, just another number in your little black book.
