After 2 hours in the decanter 2015 Chaillot is showing beautifully, fully open and giving wafting distinctive Allemand aromas with a seductive, mineral inflicted palette and fine grained tannins. It shows the warmth of the vintage but not at all hot, and its liquid rock minerality and floral lift adds a seamless balance to its fruit character. This is going to keep getting better. From Magnum. Opened about an hour before dinner; enjoyed over the course of two days. Best after a couple of hours. The 2015 “Domaine de Thalabert”pours a deep ruby/purple color with a near opaque core; medium+ viscosity with significant staining of tears and signs of sediment. On the nose, the wine is developing with notes of ripe and desiccated fruit: blueberries, figs, lavender, Kalamata olive, leather, coffee, Bacon fat, spices, and organic earth. On the palate, the wine is dry with medium tannin and medium acid. Confirming the notes from the nose. The finish is medium. This was pretty shy and awkward early but after significant air, it came alive. Lots of life left. Drink now through 2035. — 17 days ago
