Etna: Poured into a decanter about an hour prior to service; enjoyed over the course of dinner. The 2021 pours a deep garnet color with a near opaque core; medium+ viscosity with no staining of the tears and some fine sediment. On the nose, the wine is developing with Bing cherry, Asian five spice, porchini, oregano, crushed gravel and minerals. On the palate, the wine is dry with medium+ tannin and medium+ acid. Confirming the notes from the nose. The finish is long. Another stunner from this incredible, own-rooted parcel in the Calderara Sottana contrada featuring vines over 140 years old. Insane. On the palate this has nice spice and menthol hints , sweet red cherry fruit , ripe tannins , but with good grip, quite gritty with good length . Balanced acidity , touch of alcohol noticeable . Overall quite sweetly red fruit focussed , pure and expressive. This is showing quite well , though still young and fruit focused. Medium ruby , slightly lighter rim , touch of terracotta . This is really quite complex , with more development than the others. Slightly more spiced cherry , touch of smoky tea , high toned with rose , truffle and leather . Each time you return to the glass you can find something new . On the palate this is very fresh , some earthy sous bois , red cherry , porcini , elegant and refined , very long length. Spiced cherry , earthy , truffled finish . Polished but noticeable tannins , fresh acidity , perfectly balanced , alcohol completely integrated . Really refined and elegant, enormously complex and thrilling to drink . Just starting to drink quite well with time and will probably continue at this level if not improve over the next 10-15 years — 2 months ago
