Delicious. Happy 248th birthday America & all Delectable users.
Nice, soft mousse, slightly rich, gentle co2, green apple, lemon meringue, lime zest, tropical melons, both white stone fruits, kiwi, underripe pineapple juice, vanillin, some minty & dry herbs notes, semi-moist chalk power, alluvial limestone, sea spray, soft white spice, bread dough, light yeastiness, yellow florals & lilies, jasmine with fairly heavy greens, nice, round, soft acidity and a well balanced, structured, tensioned and smartly polished finish that last ninety seconds.

One of Ave’s vintage bottles. Quite tertiary and likely on the back side of the evolutionary curve. — a month ago
2024/9/2-3. There’s some young austerity, but with air the aromas really open, with salted lemon, stone, smoky minerals, flowers and judicious oak. In the palate it’s still quite tight, with ample acid and and austere structure - enjoyable but a bit gangly compared to what it will be at peak. Still, I understand Amiot has lengthened maturation times to near two years, and to me, those echoes of old school producers are very welcome — 4 months ago

Lovely to finish a long evening.
Paired w/ shortbread w/ Macadamia nuts.
I like their craft. This is good but will ascend for 10 years.
Reductive in style. Pineapple, lemon, grapefruit, lime zest, white peach, light tropical melons, cheese cloth, cream, some mint, bread dough, yeast, limestone alluvials, sandstone, light white spice, sea fossils, baguette crust, yeastiness, bread dough, yellow lilies, jasmine, Spring flowers, round crisp acidity, well balanced, nicely knitted, with a smartly polished, elegant finish that’s lasts two-minutes. — 7 months ago
