Popped and poured; enjoyed over the course of a hour. The 2021 “aequorin” pours a bright yellow color with medium viscosity. On the nose, the wine is developing with notes of tart and ripe orchard and tropical fruits: yellow apple, pineapple, starfruit, marshmallow, butter, a mix of white and yellow flowers, and minerals. On the palate, the wine is dry with medium+ acid. Confirming the notes from the nose. The finish is medium+. A fun, modern take on New World Chardonnay. Kinda gives me Liquid Farms vibes. Great flavor. Cherries fruit forward. Very little tannin. Pairs nicely with juicy buttery steak. Dark and full bodied, but young tasting. Not overpowering. Would order again! Good value at Ruth’s Chris. $82/bottle — 2 months ago
