Sofia and I used to go to their futures luncheon for many years. This vineyard consistently yields fruit that makes one of their best Cabernet’s.
It’s lush as it enters and falls onto dry, meaty tannins. Blackberries, creamy black raspberries, black plum with skin, dark cherries & purple fruits. Dry crushed rocks, dry top soil, limestone & volcanic minerals, moist clay, dry tobacco, new, raw leather, still very woody, mixed mid & dark berry cola, plenty of baking spices-clove, nutmeg, cinnamon & vanilla, dark spices with some heat, some dry herbs, dark melted, chocolate, cocoa powder, caramel notes, bright, fresh & candied florals that are dark, red, blue and framed in violets & lavender, ver nice round acidity with a highly structured, tensioned, well balanced and polished finish that lasts 90 seconds but still lands squarely on wood. — 10 months ago
Opened another recently, legendary wine, said that in the 18th century was introduced to Sultan of Constantinople's palace b/c of its clarity and called "mineral water from Carbonnieux", defying Islamic law. Pale lemon with pronounce aromas of tropical and stone fruits with herb notes. On the palate flavors of melon, mango, apple, green herbs and a crisp mineral edge. Medium+ length, balanced acidity, ending with a fruit, citrus mineral character. Nice, aging well. — 3 years ago
This is a delicious and restrained Cabernet Sauvignon from Napa Valley.
Full-bodied with medium acidity.
Showing red and black fruits with wood, earth, vegetables, spices, tobacco leaf, dark coffee and eucalyptus.
Grippy finish with raspberries.
This 6 year old Cabernet is still young and very tight. Might be in its dumb phase at this point, so it would be nice to try it again in 3 years.
Needs 10 years to mature properly.
The eucalyptus notes overwhelm the black fruits at the moment.
Showing good structure and nice complexity.

Good right out of the bottle, and better with airtime.
100% Cabernet Sauvignon grapes.
14% alcohol by volume.

Fantastic. A true classic. — 3 years ago
An enjoyable vintage, even if it’s not a top vintage, it still portrays typical P-C. Always enjoyable. Drinking very well with just a short decant. — 2 months ago
This is the Chanson/Bastion G-C…decanted 90 mins….lovely Burgh, very refined/subdued, but lacks depth to me, turned a bit sour late. Maybe a bit more earth than I like? Really lingering over it. J loves it — 3 years ago
Yellow flowers and lemon drop candy! But also a nutty and floral quality, like an aged alpine cheese. Palate is salty, creamy, but also so crystalline and pure. Layers of texture on acid on texture. How come it’s so hard to write about near-perfect wines? Base ‘16, disgorged ‘19. — 5 years ago

Deep, Rich, and elegant. The wine actually feels more viscous than normal, and it’s just heavily perfumed and flavored and thick in your mouth. It absolutely feels like chewing on a handful of fresh blue and red fruit mixed together. Perfume of violet and Queen Anne roses, as it faded over time it actually became a much more elegant and approachable wine. Absolutely delicious. — 9 days ago
