Popped and poured; enjoyed over the course of dinner at Le Crypto. FWIW, this was a touch reductive upon opening and just needed about 30min in large burgundy glasses but after that, this was fresh and beautiful. The 2021 pours a ruby color with a transparent core; medium viscosity with light staining of the tears. On the nose, the wine is developing with notes of strawberry, red rope licorice, cranberry, dried red flowers, sous bois, and a gentle mix of cool and warm spices. On the palate, the wine is dry with medium tannin and medium+ acid. Confirming the notes from the nose. The finish is medium+. After a sluggish start, this finished with a flourish. I’ve said it before…for Dauvissat, I consistently find Forest to drink pretty much just as well as the Grand Crus, especially after proper aeration. 2020 is a fabulous rendition, open and giving and adding serious weight with some time in the decanter. Pure, textured and expansive with electric acids and layered Chablisen minerality. As it is often with these wines, last glass was the best. — 12 hours ago
