1991 Dominus. Dinner with J&L B and D&M H, while staying with D&M in Santa Ynez. Opened and decanted right before serving. Loved it. Drinking beautifully. Still had some fruit in it but well balanced and some good earthy qualities. JB and I preferred this to the ‘94 Screaming Eagle we drank afterwards. — 6 years ago

Dates back to the Crusades & Scottish navigator, George Smith, owner in 18th century, followed by M. Duffour-Dubergier, Mayor of Bordeaux, then Louis Eschenauer, wine shipper. In 1990, Daniel & Florence Cathiard now own estate. A blend of 55% Cab Sauv, 40% Merlot, 4% Cab Franc, & 1% Petit Verdot. Dark red with dark berry fruit aromas, cedar and sweet spice. On the palate rich & complex ripe black fruit flavors, oak & cacao. Firm rich tannins, full, lingering, perfect balance. L-T aging. — 8 years ago

One of my favorite dinners was on the menu here at Chez Skip - cassoulet! And my knowledge of wine pairing is as sophisticated as a toddler eating spaghetti, I said to myself - hey I am eating French food and I like this French wine, so hey why not? And that was that. But as wine can be, it evoked its memory of when I had it first. I remember sitting out in the patio and being impressed with it. I thought to myself I could really enjoy French wines, but as history has shown, that was clearly a short lived notion.
Knowing it had been some time, I had an odd feeling, so I checked my Delectable history. Indeed, this was the very first wine I had rated!

A 07 Verite vs 08 Levy & McClellan cage match tonight (PREVIOUS NOTES APPLY for L&M, but bump rating up to 9.4).
La Muse is the pomerol style of their 3 wines with 85% merlot, 10% cab franc, 5% malbec. 1.5 hour decant (some fine/cloudy sediment). A wondrous dark ruby red color. On the nose: Beautiful perfumed nose of dark raspberry, mocha, floral, slight funky earth, minty menthol, crushed rocks. Taste: a soft, smooth dry medium plus body wine with mouth coating plum, minerals, earth, currants and a long dry spicy tea finish. Everything in place and drinking well now with a number of years to go. Cheers! — 5 years ago

1994 Screaming Eagle. Dinner w J&L B and D&M H while staying with D&M in Santa Ynez. Opened and waited about an hour. Decanted right before serving. Tons of jammy dark fruit. Opened more in the glass. JB mentioned full palate and balance. Great finish. Preferred this to ‘91 Dominus once this opened up. — 6 years ago

M/M Paul Chaperon owned this estate in the mid-19th Century and their descendants, the Ducasse Family, have since kept the property in their able hands until 1990, Mrs. Luis Ducasse, brought in a partner, Les Domaines Barons de Rothschild (Lafite), insuring L-T stability. Big fruit aromas with mineral & spice notes. Blackberry flavors, almost jammy, cacao & spice, rich and full. Smooth sweet tannins, great balance, lingering ending with soft earthy character. Cabernet Sauvignon 40%, Syrah 40%, Cindault 15% l, and Cardigan 5%. High altitude vineyards ( 1050 m). Aged 24 months in concrete. Cherries, berries and spices. The tannins have a little rough edge, but the wine has character and would be a great match for many Lebanese dishes. Abv. 13%. — 15 days ago
