I was told this bottle is scarcely available as only about 1,000 cases produced each vintage and most of them stay in Spain.
Rich and ultra smooth, this somewhat reminds me of Clio. Coconut and Creme de Cassis overwhelmed initially but eventually settled down. Unapologetically hedonistic, it’s nevertheless delicious and possesses great substance. Would love to try one with some bottle age, but the first vintage release was 2014.

Popped and poured from a half bottle; enjoyed over the course of an hour. The “Oeil de Perdrix” is made in the saignée method and pours a pale copper/pink color with a persistent mousse. On the nose, the wine is developing with notes of strawberry, raspberry, pink pepper, lemon, and chalky minerals. On the palate, the wine is dry with medium+ acid. Confirming the notes from the nose. The finish is medium+. A lovely expression of a Blanc de Noir Rosé from Bouzy. Disgorged April of 2023. — 2 months ago

Medium ruby in color; plums, bell peppers, and paprika on the nose; medium acidity; medium plus tannins; tastes like raspberries, jalapeño, and wet slate with a long finish. It's a really interesting flavor. It's not for everyone, but well made. I like it. — 7 days ago
