Absolutely an amazing wine! Thank you @Ron R for recommending this! I am experiencing so many elements at the same time. Reminisce of an aged Chenin Blanc where you get creaminess almost wax cheese rind and honey. Picking up an almond sticky bun. Not really acidity but unique freshness of lemon, peaches & yellow apples. Golden hay in color, Med+ body w/ nice long finish. Drinking this w/ a nice chill presents some nice acidity.

Blend of 82% Cabernet Sauvignon, 17% Malbec and 1% Petit Verdot, deep Ruby with aromas of berry fruits with spice, herb and earthy notes. On the palate flavors of blackberry, ripe cherry, fig and blueberry with currants, cacao, pepper and tobacco notes. Sentinel Cabernet Sauvignon is named for the shield-shaped block that casts a watchful eye on the entrance to Monte Rosso Vineyard. Deep Ruby with aromas of rich dark fruit, cedar and sweet spice. On the palate flavors of ripe cherry, blackberry and currants with vanilla oak and toasty nutty notes. 👅Spicy purple fruit, blood orange, sasafras, and licorice. A gentle tannic pull on the smoke tinged finish. Drinking well
Remaining wine was Slow Decanted in my refrigerator
DAY 10
👃Sweet, spicy, purple fruits with more vanilla, oak, vegetal, and tobacco notes than Day 1
👅Same sweet plummy fruit with tobacco and licorice. Fruit forward but balanced. Soft tannins and no heat
I did not have a preference for Day 1 or Day 10. There were more oak notes on both the nose and palate on Day 10. Two solid showings👍This is solidly in its drinking window & will be there for quite some time 🍷 — 3 days ago
