Elivette Napa Valley Cabernet Sauvignon Blend 2000

Very special 2000 Red blend from Spring Mountain, Napa served with a special Sunday dinner: Pasta a la Zozzona. Completely different wine in the first 30 minutes of drinking than it was after decanting for 30 minutes. Black Cherry, leather, tobacco. Soft round tannins and a LONG finish. But it’s really interesting, I’ve had wine aged half as long that showed its age 10x more than this wine. I feel like it could have aged even longer. — 7 days ago

Cain Five 2017 spring mt district. Napa. Complex wine. Probably need to open it up. Dry. Tastes expensive, but that might just be that it was held in oak. 2 hrs in. Really nice flavor. Not acidic. Lighter tannins. Fell asleep woke up and had a sip. Even better. Drank some the next day. Even better. Very smooth. Not that jammy cab. The Merlot and franc mellows it out. Similar blend as a home brew where you get a bunch of different varietals and put them together. But it seems to work really nice. 46% cab, 26 Merlot, 21 cab franc, 5 Malbec, 2 petit verdot. Really worth what I got it for. Need to open it up at breakfast for dinner. Just don’t try it with lunch or you won’t have any later. 44$. — 16 days ago

Well, here we are two years later, back at the same BYOB for New Year’s Eve with the same wine. I figured 35 years was enough—it was time to drink it.
Same treatment as in 2024: opened and decanted, then poured about two hours later. This time the nose offered noticeably more—cedar, a touch of vegetal character, and dark berries. On the palate, dark berries again took the lead. The finish was good, but at the very end it seemed to stop just a bit short but still giving it a 95. At Anthony’s

His wines from the 90’s are amongst my favorite in Napa. He is 99 now and is retired but he still involved to a lesser degree. We should all be that lucky.
