Napa Valley Cabernet Sauvignon 2007

This is a producer that should be more revered than it is. His 90’s were amongst my favorite Napa Cabernets. Especially, the 94, which is exceptional and I’ve had on 3-4 occasions.

2007 is a grand vintage but this one needs more cellaring. It is still in its adolescence. I would like to try this in another 8-10 yrs. Don’t get me wrong, this drinks nicely now but it’s best is still ahead.

I coravined & decanted this in a big Bordeaux glass for an hour and it is still a 1/2 monster.

The nose shows; dark currents/cassis, blackberries, black plum w/ skin, very black cherries, black raspberries, poached/slightly baked strawberries with understated raspberries in the glass edges, dark, rich earth with dry leaves, steeped fruit tea, mocha powder, caramel, chocolate baking bar, understated baking spices-cinnamon, nutmeg, clove, vanillin, both black & red licorice/cola, moist herbs, tree sap, limestone, dry top soils-river stone and beautiful, withering/candied dark & red florals framed in candied violets.

The M+ tannins are round, velvety, dusty and still meaty. Dark currents/cassis, blackberries, black plum w/ skin, very black cherries, black raspberries, poached/slightly baked strawberries, liqueur cherries with understated, hovering raspberries. Dark, rich earth with dry leaves, steeped fruit tea, mocha powder, caramel, chocolate baking bar, understated baking spices-cinnamon, nutmeg, clove, vanillin, both black & red licorice/cola, moist herbs, tree sap, soft, moist cigar box, leather, anise, rounded very dark spices, moist clays, limestone, dry top soils-river stone and beautiful, withering/candied dark & red florals framed in candied violets, very round, pleasant acidity with balance for days, still pronounced structure/tension, great length and a smartly, polished, ruby two-minute finish that long sets on on deep, dark spice, earthiness & ruby, dark currents.

Right now a Filet steak, not a fatty steak, Ribeye or Ribcap.

Still so youthful! Add a point or two in 7-10 yrs. .

Philip is in his 90’s and still involved in the winemaking. He walks the property daily.

Medium lemon straw , some fine lightly persistent perlage . Quite steely and minerally on the nose , some lemon pith , orange rind , white flowers , buttered brioche . Quite classic and lean in style. This has drive and persistence on the palate , electric acidity , with intense mineral , lemon rind , chalky depth . Still pretty young , taught , with good freshness and long length . With time drinking well but will improve over at least the next 5 years and last well a further 5 - 10 — 12 days ago

I’ll just commence this tasting note to see if it is accepted. Dense Ruby in colour. Blackcurrant and tobacco notes - ripe blue and black fruits - luscious texture. Anytime I’ve had a Napa (or Washington State) Cabernet I have always been impressed - probably better than most good Aussie Cabernets (and more expensive). Has a good future but irresistible right now. Have the last bottle in a year or two. Interestingly reverse osmosis was used to reduce the alcohol. Now at 13.9%. — 10 days ago

Well, here we are. Selosse Initial. What is there really to say? Is it good? Is it great? Is it delicious? Does it live up to the hype? Did it change my life?

Yes.

A beautiful golden hue in the glass with profuse perlage. There’s no need for traditional notes here, we already know. Wonderfully electric, saline, and textured. Depth, personality, and romance.

Nothing I say here matters. Go get as many Selosse champagnes as you can. Then get a few more. And enjoy life.

I am seldom dumbfounded when it comes to wine. So, I appreciate it when that happens.

This 1990 La Grande Dame was amazing and so fresh. Full disclosure, I am not normally impressed by this producer and this cuvée. Unusual for a champagne of 35 yrs to be so fresh in my experience from inception. So much so, if poured blind many would call it N/V or a fairly recent vintage. The color was even palish straw. Mags were brought from their Champagne House.

Excellent with the dessert of the evening, “Lemon Meringue Pie Cookie.”

Enjoyed at the 2026 “From Cellar Event” Pebble Beach Food and Wine.

Very pretty color of peach with a salmon hue.

Strong nose of apples, citrus, peaches, yeast, light bread and minerals.

Medium plus in body with medium acidity and tiny bubbles.

Dry on the palate with raspberries, over ripen strawberries, apples, limes, yeast, sea salt, brioche, spices, minerals, light earth and cardamom.

Long spicy finish with limes and grapefruits.

This 14 year old Rosé Champagne is drinking beautifully already, and will continue to age nicely in the next 10 years. Elegant, spicy and rich. Fruity and nicely balanced, complex and engaging.

Wine Spectator 96 points. Wine Advocate 95 points.

Good right out of the bottle, and better when not too cold.

A great sipping wine that paired beautifully with my Tuna Avocado Tartare.

A blend of 67% Pinot Noir and 33% Chardonnay, with 5% red wine. Disgorged in 2020.
