Stunning. Dauvissat perfection. 2012 Clos is perfect tonight, with more fruit definition than Preuses as expected from the site. It’s textural, chiseled and powerful with Chablisen oyster shell minerality layered in a tidal wave of spiced orchard fruit and white flowers. It’s incredibly silky on the palate showing killer volume and density with racy citrusy acids and a sea spray-like salinity to round it out. When Dauvissat is on it’s hard to beat. My go to White Burgundy Bourgogne producer in good vintages. You get good value in what is today an expensive burgundy market. 22 an outstanding vintage. I buy this without thinking in good vintages and have never been disappointed.

High viscosity, paraffin, tropical, stone fruits, lemon, lime, great chalkiness, limestone, white spice, sea spray, spring flowers, yellow lilies, excellent round acidity and elegant, polish & balance finish for days.

Excellent pair w/ the Jasper Hill Farms Harbison cheese.

Lime zest, lemon pulp in juice, grapefruit w/ pith, orange citrus blend with peel, kiwi, tropical melons, white nectarines, excellent white spice, baguette crust, gritty white chalk, dry, crushed limestone bits, grey volcanics, oyster shells, saline/sea spray, light tones of fresh herbs, yellow lilies, spring flowers with greens, excellent acidity, well; structured, balanced, knitted, beautiful finish that is even and lands on minerality & spice.

Dairyman Vineyard sits in the southern alluvial plains of the Russian River Valley near the ocean, a region where cooling fog comes in through the Petaluma Gap in the morning and once again in the evening. Medium Ruby color, with aromas of berries, tea and spices. On the palate flavors of raspberry and tart black cherry with herb, cedar and cinnamon. Preserving the heritage of Etna’s unique terroir, the Benantis devote themselves to making wine with local varieties. 🍇

After delicate pressing, the free-run juice underwent fermentation with an indigenous yeast and aged on the fine lees in stainless steel for 30 months with regular bâtonnage (stirring). 😆

📝 The result is divine with a bouquet of harmonious aromas and flavors featuring ripe papaya, mango, cantaloup, white nectarine, kumquat, bergamot, lemon oil, cherry blossom, cream, toast, gunflint, fresh tarragon, sage, crushed stones, oystershell, sea spray & blanched almond notes.

💫This wine has verve & elegance!

😋 On the palate, it’s dry, with electrifying acidity, a medium body, textured mouthfeel, medium alcohol (12.5% ABV) & persistent finish.

It’s Miller time. Well…actually Billecart time. I like this more than I buy it. One of good cuvées easily found in 375ml.

The body creamy, layered, nice c02, bruised golden & green apple, ripe Bosc pear, pineapple flesh, tropical melons-mango driven, lime & lemon zest, cream soda, cream, white spice-ginger, bread, yeast, brioche, soft but grainy moist chalkiness, sea spray/fossils, slightly chard sourdough toast, wet/softened alluvial, limestone, wet river stone, notes of flintiness, yellow lilies, white orchids, fruit blossoms, jasmine, rainfall acidity, excellent balanced fruit & earth, tension, structure with a juicy two-minute polished finish that falls onto beautiful minerality.

BTW, home grown tomatoes with Companion Bakery wheat sourdough, lightly toasted w/ olive oil, burrata, Tondo balsamic (stunning), olive oil & fresh basil never gets old.
