Absolute perfection! We sat on this bottle 8 years and it was worth the wait. Enjoyed June of 2022 — 14 days ago
The 2019 Cabernet Sauvignon Les Pavots is a dense, powerful wine that is going to need at least a few years to shed some baby fat. A rush of blue/purplish fruit, lavender, sage, tobacco, grilled herbs and incense washes across the palate. There's terrific depth, but the 2019 is so young. The 2019 is one of the more refined young Les Pavots I can remember tasting. It will be exquisite in another few years' time. (Antonio Galloni, Vinous, June 2022)

Tart With mellow undertones. Really enjoyed this — 11 days ago
Golden, delicate, perfectly balanced and beautiful. A nose of amber, sweet grass notes and apricot burst forth from the glass. Medium body, creamy, sweet notes that linger long into the night with a beautiful bead of acidity. — 21 days ago
This thing was the smoothest bottle of wine I’ve had in a decade. 2012 vintage.

Followed over two days. I’m not much of a SauvBlanc enthusiast anymore, but I still appreciate well-made offerings, and this certainly checks off the boxes.
For me, this lands in-between Bordeaux Blanc style and your typical, run-of-the-mill Cali SB. 90/10 SB/Semillon, this is a balanced and chiseled new-world SauvBlanc that plays to its strengths. It doesn’t try to be an aromatic and texturally seductive Bordeaux Blanc style, nor is it a watered-down afterthought. Gooseberry, lemon meringue, limestone and distinct grapefruit aromatics. Fleshed out a tiny bit on day two, but I don’t see the palate evolving much with more age aside from less acidity. Not quite tropical on the palate, yet it does have orchard fruits and a nervy mineral-laced acid-grip at the finish. Enjoy now and over the next few years. — a month ago

Smooth and silky. Deep berry finish, yet not too sweet. Easily drinkable. These grapes were picked with love. — 9 days ago
