This is a crazy wine.
On open it tastes watered down.
An hour in its very interesting.
Nose: ultra fine mineral dust. A memory of lemon flower. Really gorgeous. A GG quality nose.
Palate: filigreed. Elegant. Mineral. The memory of a classic mosel wine.
Needs an hour decant but I’m glad I had this. Classic in its own way.

Popped and poured; enjoyed over the course of two days. Best on Day 2. The 2021 Graacher Domprobst Spätlese (White Capsule) pours a day bright, light straw color with medium viscosity. On the nose, the wine is developing with powerful notes of tropical fruit: star fruit, passion fruit, lemons, petrol, rocky minerals. On the palate, the wine is dry with high acid. Confirming the notes from the nose. The finish is long with tongue smacking acid and minerals. A cracking pairing with lamb massaman, larb and papaya salad. Drink now with some patience but better after 2026 and through 2041. Beautiful stuff. — 15 days ago

Pale salmon color with strong bubbles. Smells like yeast and sea air. Mild mineral-y first impression followed by flavors of tangerine and aftertaste of grapefruit and nectarine. Dry. Mellow for a rose. Very pleasant. — 16 days ago

White Cap. Glorious nose of refined slate, lanolin, fresh herbs, some hints of apricot and green apple. So subtle, almost like an elegant Chablis crossed with Mosel. I am sure it will open more with air but the foundation is there for dynamite aromatics. Some sweet ginger now. Lime blossom. The palate is just awesome. Rich. chewy and dense but light as a feather and so elegant. Long and focused with sweet lime fruit and unreal purity. This is so close to a 9.7. Overnight the aromas are so stunning and the palate even more elegant but it stayed at 9.6. Actually got to a 9.7 as the finish just became transcendent and forever. — 5 days ago
