Well, here we are. Selosse Initial. What is there really to say? Is it good? Is it great? Is it delicious? Does it live up to the hype? Did it change my life?
Yes.
A beautiful golden hue in the glass with profuse perlage. There’s no need for traditional notes here, we already know. Wonderfully electric, saline, and textured. Depth, personality, and romance.
Nothing I say here matters. Go get as many Selosse champagnes as you can. Then get a few more. And enjoy life. — 25 days ago

Paaslunch op huis tuin en keukenniveau
Soms klopt alles. Gisteren was zo’n wijnmoment, vandaag was het weer zo’n moment waarop smaken, gezelschap en een glas uitzonderlijke champagne perfect samenkwamen.
In het glas: Billecart-Salmon Cuvée Nicolas François 2008, een champagne met klasse, precisie en diepgang. Rijp en gelaagd, met tonen van geroosterde noten, citruszeste en subtiele brioche.
De mousse verfijnd, de afdronk eindeloos. Voor mij is deze champagne geen aperitief maar dit is een hoofdrolspeler.
De pairing?
Oesters, puur, zilt en perfect in balans met de frisheid.
Tartaar van wortel, sjalot, cornichon en kappertjes met sriracha-mayo, spannend en licht pikant, prachtig gedragen door de structuur van de wijn
Asperges met mousseline, gerookte zalm en Hollandaise, romig, rijk en precies waar deze champagne zijn diepte laat zien
Een paaslunch die nog wel even blijft hangen. De chef van de Kwalitaria was in vorm 😉

Popped and poured; enjoyed alongside Texas BBQ on the plane home. The 2005 “Hommage a Jacques Perrin” pours a deep purple with a ruby rim; medium+ viscosity with moderate staining of the tears. On the nose, the wine is developing with mostly dark fruits: mixed brambles, black cherry, animale, star anise and black pepper, garrigue and stony earth. On the palate, the wine is dry with medium+ tannin and medium+ acid. Confirming the notes from the nose. The finish is long. This continues to be ever so dense but paired admirably with the BBQ. Cork broke into two pieces, but got the bottom 1/3 carefully using a standard French waiter, no cork was left in the bottle. Color looks quite youthful for a 36-year-old Grand Cru Chablis, initially some SO2/matchstick aromas, but they blew off quickly. Followed by lemon, mineral, flavors are similar, perfect, lively acidity, great persistence and length, for Chablis I suppose 1990 was a warmer vintage (13.5% ABV), but this bottle is amazing and almost perfect, WOW!!’ — 5 days ago
