My last bottle from the Season’s set. 12 year old lambic. Carbonation has faded to maybe 1.5 volumes, almost like cask ale. Not as acidic as I expected, tons of cheese and funk, still rustic as ever with classic lemony funky lambic notes. Excellent, but I prefer this younger. Sweet spot for lambic for me is prob 3-4 years max from release. — 17 days ago
