Clos Ste. Hune Alsace Riesling 2007

Medium lemon straw colour . Quite complex and youthful nose , some ripe apple, white peach, mint , wet stones , some floral hints , marmalade and a hint of petrol . On the palate this is quite bold and dense in style with , intense with some ripe apple , white peach , light herbal touch and a very saline , slate driven finish . Hints of citrus peel and camomile. Balanced acidity , good balance if quite rich in style , lots of extract , with a pretty dry , good length citrus tinged finish . Still young and on the basis of this bottle , just entering its drinking window, from now and over the next 15 years . This really does change in the glass and needs some time to show its best, becoming more focused and mineral, the richness giving way to layers of mineral extract and salinity. Salmon color with copper reflexes. Nose of grapefruit, and Mandarin peel, lemon juice, pink flowers, and petrichor. Faint Aperol on the back. Palate is explosive but not effusive. More grapefruit oil, lemon pith, garrigue, waves of saline minerality and a bright acidity that makes it go on and on. Pretty serious argument on why it deserves its reputation is the best rosé in the world  — 4 months ago

Medium lemon gold , still some perlage. This is quite evolved on the nose , with candied peel, brioche , roasted nuts , brine and touch of porcini . On the palate this has good intensity , with high acidity . Creamy lemon peel , toasted nuts , brioche, and a mineral backbone . Quite persistent, lemon pith and chalky finish . At peak now and will continue over the next few years , though this won’t improve — 5 months ago

Nose (Aroma): The aromatic profile is a walk through an ancient, sacred forest after the rain. It opens with a deep sense of humid earth, fungal truffle, and a subtle, refined smoked leather. As it opens, a beautiful core of blueberry compote and dried dark fruits emerges, intertwined with a complex tapestry of Chinese medicinal herbs and dried florals. It is both powerful and hauntingly ethereal.

Palate (Taste): The palate is a breathtaking journey into umami and complexity. True to the legend, the fruit has transformed into an intense medley of sweet preserved fruit (dried apricot, date). This is immediately met with a profound savory depth: a distinct salted Chinese preserved plum character provides a mouthwatering salinity, while a fine dusting of astragalus root powder and angelica root brings an authentic, warming medicinal bitterness that defines the wine’s regal structure. A hint of spicy dried ginger soda lingers on the mid-palate, adding a lift of unexpected freshness.

Acidity & Structure: The acidity is the heartbeat of this wine—sustained, mellow, and incredibly refined. It does not jab but rather flows continuously, carrying the dense, dried flavors across the palate with remarkable energy. The tannins have fully resolved into a silken, powdery texture, leaving nothing but harmony.

Finish: The finish is eternal, echoing with notes of dried citrus peel, forest floor, and a final whisper of sweet tobacco and herbs. A truly humbling experience; this is not merely a wine, but a living artifact of time, worthy of the title "Great Emperor."

Outstanding mousse & lively acidity. Lime zest, lemon pulp in juice, grapefruit w/ pith, orange citrus blend with peel, kiwi, tropical melons, white nectarines, excellent white spice, baguette crust, gritty white chalk, dry, crushed limestone bits, grey volcanics, oyster shells, saline/sea spray, light tones of fresh herbs, yellow lilies, spring flowers with greens, excellent acidity, well; structured, balanced, knitted, beautiful finish that is even and lands on minerality & spice.

Popped and poured; enjoyed over the course of an hour. The 1981 pours an amber color with medium+ viscosity. On the nose, the wine is developing (still!) with notes of ripe apricots, orange peel, honeysuckle, marmalade, candied nuts and crushed rock. On the palate, the wine is sweet with medium+ acid. Confirming the notes from the nose. The finish is long. This bottle of the 1981 seems evergreen considering the way it showed today. Drink now through 2081?? — a month ago

Light medium caramel core , light copper rim. Quite mature , with spiced creme brûlée , saffron , burnt sugar , some crystallised orange peel , desiccated coconut . Slightly monochrome . On the palate this is quite light , with quite high acidity and a burnt caramel bitterness . Medium sweetness only , quite refreshing acidity . Slightly bitter orange caramel finish .
