Pale straw with very fine bubbles and quickly dissipating white mousse. Nose is clean and inviting yielding baked quince, and white pepper. Palate is crisp and clean yielding toasted citrus rind, baked quince, white pepper, and white flowers with yellow apple on the moderate finish. Medium plus+ acidity, of course. This is Pommery’s “gastronomic” offering and I can see why. Lithe enough to properly accompany classic white wine dishes, while giving just enough “stuff” for weightier fare. Served blind. The wine poured a deep straw color. On the nose, this nose is faking the funk on a nasty dunk! Slightly oxidative and reductive with funky apple and raspberry and autolytic. In fact, the nose is almost cheesy funky with some mushrooms too. On the palate, lush apples and golden raspberries with a touch of citrus. Absolutely fabulous acidity with a super long finish. There was a lot of underlying energy in this. I thought this was vintage Champagne from 2006. Wow…my first P2. Love this and an amazing pairing with beluga caviar. — 2 days ago
Just another outstanding bottle! All the rest of these 2008's are safely in storage, this was our last in the home cellar. Future sampling 2028+.

From the gorgeous salmon, gold hue to the complex orange peel, dried apricot, raspberry, almond, toast, and brioche aromas to the incredibly smooth mousse and palate.
