Cordon Bleu Brut Champagne Blend

A classic, polished Champagne that delivers both charm and depth. Bright notes of green apple, lemon zest, honey, and brioche unfold with every sip. Fine bubbles and vibrant acidity keep it fresh and elegant throughout.

There’s a lovely balance of orchard fruit, floral hints, and that signature toasty croissant finish from bottle aging. Versatile and food-friendly, great with seafood, seared white meats, or simply on its own as a celebratory aperitif. 🎉🍏🥂

Cristal Brut Champagne 2015

Delectable Wine
9.6

Tasted at the maison, the 2015 is rich, dense and explosive, with tremendous textural intensity and also a good bit of energy to back it up. Citrus confit, spice, ginger, chalk and dried flowers abound in a Champagne endowed with tremendous aromatic presence in a style that offers notable richness, but lighter than vintages such as 2012. There is a bit of the savoriness that is such a signature of the year, but it is nicely integrated in the wine’s fabric. Two later tastings in my office strongly suggest the 2015 has already started to shut down a bit, which is a shame, as it may be hard to read for some time to come. Dosage is 7 grams per liter. Disgorged: November 2022. (Antonio Galloni, Vinous, May 2023) — 3 years ago

Lieux Dits Les Carelles Extra Brut Blanc de Blancs Grand Cru Champagne Chardonnay

Disg. 2012. My favorite of the Lieux Dits. Absolutely singing on the pop and pour with its signature aromas and flavors and integrated oxidative character supported by riveting energy, exceptional detail and seemingly infinite depth. Always such a treat. — 5 years ago

Ca' del Bosco

Vintage Collection Brut Franciacorta Champagne Blend 2016

Ca’ del Bosco “Annamaria Clementi” Franciacorta 2016, Franciacorta DOCG, Lombardy, Italy 🇮🇹

Overview
Prestige cuvée Franciacorta from Ca’ del Bosco, crafted using the traditional method and aged extensively on lees. The blend includes Chardonnay, Pinot Nero, and Pinot Bianco, the latter adding a distinctive Italian identity rarely seen in Champagne. The 2016 vintage shows exceptional balance and refinement, delivering the depth and elegance expected from one of Italy’s most iconic sparkling wines.

Aromas & Flavors
White peach, baked apple, citrus zest, toasted brioche, almond pastry, and delicate floral tones. Subtle hints of honey, lemon curd, and crushed stone emerge with air, giving the wine impressive aromatic complexity.

Mouthfeel
Ultra-fine mousse with a creamy yet energetic texture. Structured and layered with vibrant acidity supporting a deep mid-palate. Long, persistent finish with elegance and precision, prestige cuvée level balance that rivals top Champagne houses.

Food Pairings
Lobster or scallop crudo. Oysters with citrus mignonette. Truffle risotto. Branzino or Dover sole. Aged Parmigiano Reggiano

Verdict
A striking example of Franciacorta at its highest level, refined, expressive, and unmistakably luxurious. The structure and finesse easily evoke comparisons with tête de cuvée Champagne, yet the presence of Pinot Bianco adds a subtle Italian nuance that sets it apart.

Did You Know?
Franciacorta requires longer minimum lees aging than Champagne for vintage wines (at least 30 months for vintage expressions), contributing to the creamy texture and complexity found in prestige cuvées like Annamaria Clementi.

🍷 Personal Pick
Absolutely a “whoa factor” sparkling wine, each glass reveals depth and refinement comparable to top Champagne prestige cuvées, yet with a distinctive Italian signature.

Saphir Saumur Brut Vintage Chenin Blanc 2019

Deep caramel, toasty edges, lemon sorbet. This is a complete dream, how on earth is it less than 20 quid? Assume the producer is in the midst of remortgaging their property so buy now before the whole enterprise collapses.... — 3 years ago

V.O. Extra Brut Blanc de Blancs Grand Cru Champagne Chardonnay

An all star evening. I have not had many Selosse wines but the one common denominator besides his oxidative signature for me is a multidimensional texture on the palate. Very controlled and moderate oxidation. Fragrances of peaches, apples and almonds . In the mouth layers of citrus , bread and yellow fruit all driven by a freight train of acidity. @Severn Goodwin I apologize for how long it took to post on the entire lineup (I hate when life gets in the way of fun). A night of wine lovers doing what they do best, being generous and sharing.

@Ira Schwartz No regrets on the measured posting of subsequent bottles; noted you got to them recently. I'm with you, I'd rather host the best we've got than cloister them away inside the confines of our home, smiles are meant for sharing. Notes are meant for later.

Bollinger

La Grande Année Brut Champagne 2012

A decidedly lovely clear gold with effusive perlage in the glass. Tiny, persistent bubbles and really nice creaminess. The nose is remarkable and highly expressive with some really nice citrus aromas fresh out of the gate. Kumquat and pears, marzipan and apricots. Fresh brioche bread and a welcome shock of nutmeg and cinnamon. Chamomile after around 45 minutes in the glass. A bit of red berry goodness to top things off.

Always a superstar champagne and seemingly always a notch above other vintage Grande Marque bottles. 65% Pinot Noir primarily from Aÿ and Verzenay and 35% Chardonnay mainly from Oiry and Mesnil-sur-Oger. The acidity is still present and zippy despite the dosage of 8 g/l. But the key here is that signature Bollinger power and grace which shines here beautifully. Such a vibrant and elegant champagne.

A full bodied, lush wine. Truly wonderful balance, structure, and texture. The palate follows the nose with citrus fruits for days. Fresh herbs and yeast with a backdrop of spice throughout. Green apples and cherries absolutely sing. A champagne that’s full of clarity and what it wants to be. While it is drinking so nicely right now it may be worth waiting a few years. You will be rewarded.
