It's time for my #FridayCabernetfix. Here is a beautiful one from Washington State.
A pretty color of dark ruby with a short reddish rim.
On the nose blackberries, black plums, cooked cherries, raisins, dried figs, vanilla, cedar, chocolates, mocha, bell pepper, vegetables, black pepper and spices.
Medium plus in body with medium acidity and pretty legs.
Dry on the palate with blackberries, plums, cooked cherries, earth, oak, spices, light vanilla, tobacco leaf, peppercorn, espresso, chocolates, light vegetables and pencil lead.
Long finish with round tannins and tangy raspberries.
This is a delicious Cabernet Sauvignon from Red Mountain in Washington State.
Already showing nice complexity, although it is still young and needs 3 years to mature properly. Will be good in the next 10 years.
Needs time to open up properly. I gave it 90 minutes, which is when the tannins showed up and brought in nice structure, and a nice mouthfeel.
Rich and delicious. Spicy and good by itself or with food.
This Single Vineyard is fruit forward and extremely dry, which is a unique combination. As it opens up it becomes earthier.
I paired it with a Charcuterie board of meats and cheeses. Really nice with the fatty Italian salami, and will pair very nicely with a big piece of steak.
100% Cabernet Sauvignon grapes were aged in 50% new French Oak barrels.
15.1% alcohol by volume.

Waipara west, two terrace red, pinot noir, waipara 2016
There's a bit of an oaky thing first on the nose, along with gun powder (which goas away after a while), pomegranate, cherry and raspberry and a tiny touch of grapefruit. That's an intense nose! The palate is made of a huge acid backbone, a silky mouthfeel through and through, with an almost milky texture at some poiny (first time I encounter such with a pinot), a nice cherry, raspberry note all along, gentle, carressing tannins in midpalate before a rather long, tangy finish with the same fruity notes, that silky, slightly teasing tannic layer and subtle bitterness too. Chalk, dust flavored raspberry mixed with slight green pepper that has a medium long finish. Deep red/purple color that reminds of Syrah but a palate that makes you suddenly think sweet and deeply complex all at once (even though it is definitely not sweet). After having this at different stages in the bottle, have to say a little longer time in the cellar seems to increase complexity and overall length of finish. Excellent wine!! — 12 hours ago

Van der Kemp Vineyard(30 acres) sit high on top of Sonoma Mt.
Hi streak of acidity at first. Tart & tangy…Dried raspberries, ripe cherries, black tea, forest pine, asian spices emerge from this plush finish. Needs a 3-4 hour decanting.

Pop and pour, but air only helped. On the nose: blackberry, tar, plum, smoke, cool herbal notes as well, but some vanilla and cinnamon rounding things out. On the palate: very good acidity, very dense black fruit, tar, charcoal, and excellent density, transitioning into a wall of tannin. After 12 years, this seems structured to age for a very long time. Color - burnt red with some bricking and a bit cloudy—a savory look indeed! Nose - dark deep cherry, smoked meat, pencil lead, gravel and notes of mint, cream cassis vanilla and with a subtle funky spice at the tail end giving much character to the wine. Taste definitely does not disappoint—an immediate creamy feel and dark cherry, savory, spice initially hits the pallet followed by cocoa, graphite and a smoke like aged vanilla long finish.
