A few things first.

This Jasper Hill Farms Harbison is the creamiest, gooey delight out there, once you let it warm up. I take it out a 1/2 hour before serving. It is wrapped in spruce cambium, which is the inner bark layer of a spruce tree. Gives it a interesting characteristic. Always a great pair with WB and or Blanc de Blanc Champagne.

PYCM is simply one of the better & consistent white burgundy producers. They’re close to town and not far from Olivier Leflaive. Right around the corner basically.

2020-23 has been a good run in white burgundy. Maybe, 24 too. Not sure yet. I haven’t had a big enough sample size yet. The ones I have had, very good.

The nose reveals; Meyer lemon, green apple, lime zest, tropical melons, white stone fruits, honeycomb, frothy cream, light caramel, some herbaceous notes, paraffin, sea fossils, saline, grey volcanics, dry limestone, chalky powder, yellow & white lilies that remind me of funeral arrangements.

The palate is round to thick, vicious & waxy. The flavors mirror the nose. Meyer lemon, green apple, lime zest, tropical melons, white stone fruits, honeycomb, frothy cream, butterscotch, caramel, some herbaceous notes, white spice that palate burro’s w/ pleasant heat, paraffin, sea fossils, saline, grey volcanic fine bits, dry limestone, chalky powder, with tiny bits, yellow & white lilies that remind me of funeral arrangements, rainfall acidity with a round, lush, well balanced finish w/ good length/tension and lasts two-minutes long setting on earth-volcanics & spice.

Really nice overall, but definitely lost quite a bit from night 1 to 2. Pretty refined but with great earth and body. Has a bit of a rounded crunchy fruit quality in a nice way. Nice pairing with chicken thighs with feta and olives but was probably a better pairing a few years ago. Still nice and always appreciate bize. — 4 months ago

More delicate than fulsome. Definitely more citrus than stone fruit. Palate intensity is medium plus - some mineral and spice. A classy bottle of white burgundy. The trademark heavy bottle from PYCM. — 4 months ago

Grapefruit and plenty of mineral on both nose and palate. Some austerity as you often get with Saint Aubin. As Jasper Morris MW describes the terroir - “A steep south west facing vineyard overlooking the hamlet of Gamay. It offers attractive wines but not in the First Division of St-Aubin.” The following night notes of mandarin on the palate with the ever present mineral. — 2 months ago

Tasted a lot of 2023 burgundies last weekend. Thought I’d try a white with some age.

With aging white burgundy, sometimes it gives you a touch of v/a. This is on nose but not the palate. Believe it is v/a but there is some confusion with the scent of mushrooms. Thought it might be some burgundy cellar funk. But yes, some detectable v/a. Yet, it’s not entirely offensive.

The palate show excellent viscosity. It’s full & round. Golden-green apples, creamy lemons, some lime zest, both stone fruits, not so sweet pineapple syrup & kiwi notes, warm caramel, Brach’s butterscotch candy, gentle but thick honey, their is some unfortunate, faint wet cardboard that comes once it opens up, mushrooms, saline-sea foam, excellent, white spice, oyster fossils, touch of flintiness-gun powder, smooth chalky powder, wet limestone marl, some herbal notes, yellow lilies, white Spring florals set in greens, pleasant, round acidity with perfect balance, mid toned/structured, nicely knitted, elegant, rich finish that lasts 90 seconds and lands on spice, chalk and volcanic minerals on the long set.

Unfortunate about the minimal cardboard. I’d add a point, maybe two w/o it.
