Interesting vintage bubbly. 50/50 Blend of Chardonnay and Pinot Noir. Dark golden color. Yeasty aromas of mushroom, burnt caramel and orchard fruit. Flavors of bruised apples and pears, mushrooms, caramel sauce, hazelnut, quince and brioche. Hint of salty lemon zest on the long and drawn out finish. Quite fresh tasting despite its age. Lively bubbles and creamy mousse. Quite complex and well developed. Might be a bit past its prime but still delicious. Thanks for bringing this New Year’s Day bubbly, Ron B! — 2 months ago
Really very good. Probably best wine I’ve had from Ceritas. 12.3%, tastes old school but with slightly more new world flavor characteristics like warm spices and purple berries. Great acid and lingering finish. Very enjoyable and fun to try with the age. — 3 months ago
Very fresh, clean, the softest mousse on the planet. Beautiful citrus, most delicate of minerals, gentle spice, grand acidity, focused precision and balance for days. Excellent. Just overly expensive. — 6 days ago
2023 vintage in October 2025. Bought at the winery in September 2025. Appreciated. — 4 months ago
Dark cherry & Prune plum. Comes across as quite big and rich despite just 13.9%. Super juicy and drinkable. Black tea leaves, grippy with a bite, well managed tannins. More of a red meat than a white meat Pinot. Would do well even with a Burger. Not my style (for this it has a little too much fruit) but really well put together! A couple of years in the cellar would make it even better - or drink now. Even better days later! — a month ago

Still fresh, big wine. Widly different than the Pousse on Christmas Eve — 2 months ago
So Williams Selyem Pinots should be treated is the same fashion as good burgundy, with age. It will always be somewhat sweeter than red burgundy but nonetheless very good.
This shows w/ an array of mid berry fruits accompanied by some darker fruits. Strawberries, cherries, pomegranate, cranberries, raspberries, hint of rhubarb, blackberries and haunting blueberries. Mid berry cola, red licorice, fruit tea, eucalyptus, pine tar notes, pine tree bark, dark, rich soils/earth, dry herbs, mid, dark spice, dry crushed rocks, dry limestone powder, black pepper notes, dry river stone, dry fall leaves, bright florals that are; red, blue, purple with a mix of red & pink roses, late spring waterfall acidity with extreme balance, tension, structure with elegance & smart polish for days and long sets on tree bark/sap & spice.
Still ascending. — 3 months ago

This is a great sparkling wine. It smells almost exactly like apple juice to me and the taste follows suit. I wrote in my notes “overwhelming apple,” but that is not a bad thing. I also got some pear and like toasted notes. Bubbles are lively, makes it fun to drink. Strikes a good balance between fresh and rich. — a day ago
