2013 and it’s still alive and kicking. As it opens up it begins to express all of its tropical fruit aromas like mango, papaya and passion fruit. It has a creamy aroma and creamy texture from its fermentation and ageing in oak. It’s like a light coconut and white chocolate powder dashed on top. Nose has new oak aged blueberry/blackberry juice, blueberry seed, plum skin, mashed over-ripe plum, dark chocolate powder, ripe black cherry and charred red pepper.
Palate has ripe blackberry, ripe black currant, semi-dried plum, dried blueberry, sweetened dried cranberry, blueberry juice, cedar shavings, roasted plum tomato and mild green pepper on the very long finish.
This bottle is in a great spot tonight, but ideally would benefit from another 6-10 years of rest. A fantastic pairing with our slow cooked pulled pork. Sourced from a local to us Columbia Co NY farmer, a Boston Butt with a smoked cayenne rub, well smoked ham hocks and my homemade barbeque sauce, an exceptional match!
