The Paring

Red Cabernet Sauvignon Blend 2019

Delectable Wine
9.0

The Paring’s 2019 Red is a gorgeous Cabernet Sauvignon-based blend from the team at Jonata and The Hilt. It soars from the glass with wild flowers, herbs, blood orange and red-fleshed fruit. Elegant and nuanced, the Red is also a tremendous value. $20.00 (Antonio Galloni, Vinous, July 2022) — 2 years ago

The Hilt

Santa Barbara County Chardonnay 2015

This chardonnay is a gastronomic wine and will pair very well with chicken, pork and fish. I drank it with Sous Vide prepared salmon with lemon risotto and it was excellent and made the wine smoother. The complex flavors in the wine like lemon and custard are very intense and the the acid, fruit and mineral are very well balanced. A bone dry chardonnay and probably not everyones cup of tea. — 4 years ago

Pax Mahle Wines

Lauterbach Hill Russian River Valley Syrah 2004

Photo from file. 2004 Vintage. The cork just disintegrated but somehow the wax top saved the wine. Poured it trough a stained into decanter and then was wine of the night at poker. Drink up but have a strainer and decanter ready. Perhaps an ah-so twin blade cork puller would have done better and will try that on future bottles of this. It trumped a 2012 Saxum Broken Stones. — 4 years ago

Château Lynch-Bages

Grand Cru Classé Pauillac Cabernet Sauvignon Blend 1990

Delectable Wine
9.6

The 1990 Lynch-Bages remains the towering Pauillac it has always been, even if Jean-Michel Cazes personally prefers the 1989. It has a riveting, graphite-infused bouquet that is brilliantly defined, very focused and sharp as a razor-blade. Poured directly against the 1990 Lafite-Rothschild, this Fifth Growth beats it hands down. The palate is very well structured; this is an aristocratic Lynch-Bages with impressive grip after 28 years. There is a symmetry underpinning this wine, a sense of energy undiminished by the passing years, that makes this 1990 Lynch-Bages so compelling. Just awesome. Tasted during the Christmas Dinner at Noble Rot restaurant. (Neal Martin, Vinous, December 2019)

Tolpuddle Vineyard Pinot Noir 2017

Very soft and easily accesable but do not let that fool you. Great power in this wine. Paired with lobster and veal blade steak. Matched perfectly. — 5 years ago
