Pale straw lemon color with frothy mousse and lively bead of bubbles, long lees aging. A nose of fresh fruit with yeast, nutty notes and floral scents. On the palate flavors of peach and citrus flavors with biscuit tones. Nice balance with acidity, delicate textures, medium+ finish ending creamy with toasty oak and chalky mineral character. So many bubbles! Really impressive. Very complex. Cream, brioche, citrus, good amount of saline, herbal honey, honeysuckle. So well integrated at this moment. Better with 3 hours of air and closer to room temperature. Long finish with lemons, almonds, tangerine, bit of grass. Definitely one of the best champagnes I’ve had. — 4 months ago
