2 hour decant(little fine sediment). A striking dark purplish magenta color. On the nose: very aeromatic notes with perfumed dark berries, forest floor, spearment, smoked meat, truffles. Taste: silky, layered, plush wine with dark plum/cherry, milk chocolate, smokey cedar, earth, and a peppery graphite medium plus dry finish. YUM! Historic style of making champagne, eye of the partridge is something between a Blanc de Noirs and Rose. Such an appetizing rose gold color. Pastry/biscuit, strawberries & cream & clementine on the nose, much more lithe, tense and bright on the palate.
Honestly it’s hard to come up with descriptors because it’s just a joy to drink.
Disgorged last year on Valentine’s Day.

On the nose: very aromatic notes greet you with black plum/blackberry, forest floor, leather, floral, menthol, cedar, and milk chocolate. Taste: silky, rich, lush wine with brambly red plum, graphite, leather, chocolate mocha, and a spiced dried herbs/cigar box long finish. YUM! — 2 months ago
