Domaine Du Pavillon De Chavannes

Château Margaux

Pavillon Blanc White Bordeaux Blend 1981

Took the bottle from my cellar for Adrian Zarzo who is turning 40 today. 1981 Pavillon Blanc is a great wine. Impressive prestine bottle. — 5 days ago

Maison Albert Bichot

Domaine du Pavillon Clos des Mouches Beaune 1er Cru Chardonnay 2016

Tried again over dinner 3 month later. Tons of minerals. The classic hazelnut complexity of white burgundy is omnipresent. Meyer-Lemon, touch bitter, bracing acidity. 13.5% high for a white. Has a bite. Quite tannic. This can easily be aged for another 5 years may be more. Too bad these wines are so expensive. In a Restaurant this will be 250. — 2 months ago

Maison Albert Bichot

Domaine du Pavillon Clos des Ursulines Pommard Pinot Noir 2012

Medium garnet; medium intensity aromas of forest floor, earth, subtle mushrooms, old wood, black cherry, balsamic macerated strawberries; dry, high acid, medium alcohol, medium body, medium plus intensity flavors consistent with aromas; quite earthy with mostly tertiary flavors, medium finish — 3 months ago

Le Pavillon de Saint-Jacques

Lalande de Pomerol Red Bordeaux Blend 2007

Always funny how the least promising bottles can surprise you. This was purchased for maybe $15 a decade ago and forgotten about out in the cellar. But decanted off the sediment now, it’s alive and enjoyable, elegant in its own rustic way. Lively black currant and black pepper nose, some fresh green pepper, spice, good acid and a really nice silky texture through the palate. — 7 hours ago

Château Margaux

Pavillon Rouge Margaux Red Bordeaux Blend 2009

For me, the connection to Ch. Margaux is in name only. While it’s a highly competent wine, there’s no hint of the elegance, nuance and intrigue of the flagship wine. While that might be related to vintage (2009 is not generally know for subtlety or nuance), I’ve had this wine in different vintages with similar returns. Fun for a night. — 3 months ago

Coffee and caramel. Apricot. Nicely balanced acidity. Great with some nice cheeses at Le Pavillon — 2 months ago

Le Prieure d'Arras Crozes Hermitage Syrah 2017

Just OK. Drank at Le Pavillon in NYC on recommendation of somm as a less funky alternative to Jean Foillard. That didn’t really translate for me. — 3 months ago
