Louis Bouillot – Blanc de Noirs – Brut
Crémant de Bourgogne AOP – Burgundy – France 🇫🇷
Overview
A Blanc de Noirs crafted primarily from Pinot Noir (and sometimes Gamay), showcasing a more structured and savory expression of Crémant de Bourgogne. Traditional method production delivers finesse, while this cuvée leans into tension and complexity over simple fruitiness.
Aromas & Flavors
Subtle red berry notes, wild strawberry and raspberry, intertwine with brioche, toasted almond, and a lightly savory, almost mineral-driven undertone. Less about fruit, more about nuance and depth.
Mouthfeel
Fine mousse with vibrant acidity. The palate shows noticeable tension, especially on the back end, where it lingers longer than expected. Slightly firmer structure gives it a more gastronomic feel.
Food Pairings
Perfect with charcuterie, mushroom dishes, roasted poultry, or aged cheeses. Also shines with savory appetizers where the wine’s tension can elevate the pairing.
Verdict
A more savory and structured Crémant that stands apart from lighter, fruit-forward styles. Complex, balanced, and quietly delicious, this is Crémant with intent.
Did You Know?
Blanc de Noirs means “white from black,” referring to sparkling wines made from red grapes like Pinot Noir, where careful pressing avoids color extraction while preserving structure and depth.
🍷 Personal Pick
A go-to when I want bubbles with a bit more edge, less playful, more thoughtful, and seriously satisfying. — 2 months ago
Pale gold color. On the nose apple, lemon pie, wet stone. Medium body. Dry. Creamy texture, mineral driven. Fermented in 75% steel tanks which and you can taste it. Long finish with taste of citrus, toast, grapefruit. I would like it more with more dosage. — 4 months ago

Color is a little darker than I expected!
Smells like red apple and seaweed…and cured turkey.
Tastes very apple-y, but more of a sweet apple than a tart apple. Some cherry. A little toast and a slight champagne-y quality. Enjoyable. Good deal for the pricier liquor stores in the area I am visiting. 89. — 9 months ago
Beautiful wine and grand vintage. Magic — 2 months ago

Nose is racy, deep citrus, orange zest, hint of Tang! Dusty pastry and frosting with cinnamon sprinkles. What a nose, showing better on day 2! Rich and deep, great balance, but still a little tight. Pleasant bitterness and grip that pushes this into serious rosé territory. — 4 months ago
Light golden in color.
Strong nose of apples, citrus, pears, yeast, spices, light marzipan, brioche, minerals and white pepper.
Medium plus in body with medium sized bubbles, and medium plus acidity.
Dry on the palate with red and green apples, citrus, lemons, yeast, sea salt, limes, light earth, herbs and spices.
Long finish with limes and light marzipan notes.
This is a delicious Champagne. Fruit forward, elegant and complex. Nicely balanced and easy drinking.
Good right out of the bottle, spicy and entertaining.
Good by itself as a sipping wine.
A blend of 42% Chardonnay, 40% Pinot Noir and 18% Pinot Meunier. Mostly from the 2018 vintage, with 30% from older vintages. Drank from a Magnum.
12.5% alcohol by volume.
92 points.

This bottle was smoking incredible richness complexity and length. Impressive! — 5 months ago
Light gold color, more citrusy character with bready notes, lighter in body than Bolli, with more pronounced toast notes — 6 months ago
My first vintage Crémant, this shows some development. Ripe citrus, lightly baked apple, pear, with hint of toasted brioche. The effervescence remains fine and persistent.
Easy drinking. — 7 months ago
Consumed under less-than-ideal conditions, but showed well. — a year ago
Lemon yellow. Fine bubbles. Elegant aroma with something in the deep area. Creamy. Aged flavor. Changed a lot. Dried brioche came out later and quite impressive. Louis Roederer Cristal 12 @9750, wine plus - vic, 260510 — 2 months ago
Strawberry notes, crisp and airy. Good for a warm sunny day outside. — 3 months ago
Leftovers from our 2nd Annual, “Bierock Bonaza: Let’s have some funza with Runza”.
Popped and poured; enjoyed over the course of three hours. The 2015 pours a deep ruby with a slightly purple tinge and a near opaque core; medium+ viscosity with light staining of the tears. On the nose, the wine is developing with notes of lightly stewed, spiced strawberry, ripe fig, and cherry lozenges, red flowers, green herbs, with a touch of leather, and a mix of organic and inorganic rocky earth. Just the faintest hint of mouse. On the palate, the wine is dry with medium tannin and medium+ acid. Confirming the notes from the nose. The finish is medium+. The alcohol is also medium+. Delicious. Drink now through 2030.

Magnum pour decanted was my favorite. Really hits with a punch of acid off the bat - pomelo, green citrus, hint of mushroom. Very fine bubbles, cinnamon roll glaze creaminess. Non-decanted version was more bitter, more grapefruit zest and pith. 70% pinot noir, 30% chardonnay - though the color was quite light and leaned straw with just a hint of pink. — 6 months ago
Pale lemon color, light creamy mousse, tiny bubbles, with aromas of stone and citrus fruits, underlying toasty notes. On the palate flavors of apple and peach with lime citrus zest, honeysuckle and chalky nuttiness. Lively acidity with good balance, long finish ending with fruit, biscuit and slight chalky notes. — 6 months ago
