This has really changed or at least this bottle. The acidity has perked up significantly. Very tight on opening, needing about 30-60 minutes of air. Lemon zest, oyster shell and minerals. Beautifully composed, pairing so well with a diverse array of food (tonight was fusilli with clams, Serrano, pecorino, garlic and roasted cherry tomatoes). It’s amazing how this wine went from low acidity and almost flabby to tight with punchy acidity. I have one bottle left that I will likely drink this coming year. — 3 years ago
This wine has improved significantly. Nose has back cherry with damp earth needs time to open some sour cherries flavors very long finish. Excellent wine — 5 years ago

Darker than the last one we tried - like it a lot for Hungary! — 8 years ago
Expressive nose of red fruit, slint, a hint of smoke, light bodied and high acid. Ribeiro blend, showing Atlantic. A treat for Burgundy lovers that don’t want to spend that much — 4 months ago
Exceptional. Our guests loved this from the first sip. this wine paired beautifully with with the salty latkes and sour cream appetizers we served. It was just as magnificent with roast salmon, and a butternut squash with maple-Serrano glaze. Depth, brightness and all-around delicious. — a year ago
A mid-tier Muga slot. Deep purple in color, sage, blackberry, new leather, mild vanilla. Medium + body, alc and tannins, medium acidity. Dry of course. Long finish. Tertiary flavors are not yet pronounced. Would be fabulous with ribeye, but tonight it's paired with cheeses and Serrano ham.

Lovely wine , excellent with cheese and serrano ham. — 6 years ago
Sour cherry, graphite, tobacco, slight vanilla at the end. Delicious and pairs well with cured meat like chorizo and Serrano ham. Med-low on the tannins. — 6 years ago
Cab Franc can sometimes overwhelm the palette with excessive pyrazines and bell pepper. Romaine Guibertau’s Rouge, though, is a good example of how de-stemming, introducing little or no oak, and relying instead on minerals, earth, and the right amount of fruit can form a really terrific finessed wine.
This entry level from the masterful Loire winemaker has a high toned whiff of Serrano pepper followed by earthier damp notes of gravel, minerals, green strawberry, and sour plum. Clean and pure, it is chalky dry and beautifully constructed. — 8 years ago

Drank at Bottles in Paris with Sarah and Brice Garrett from Serrano Wines in Paso Robles.
Dark ruby red. Dark nose with some floral notes, dark berries, and a little savory. Medium plus (6.5/10) and full bodied. Some herbs on the palate, savory, leather and dark raspberries. Long and lingering finish. Drink till 2027. (91+) — 9 years ago
Along a bustling path made of ancient cut cobblestone, shadows lengthen across the exterior walls. Taverns bursting at the seams with people searching for refuge and libations as the sun grows weary. At the edge of this narrow bustling thoroughfare, the cobblestone rises up and creates a barrier against the vast void of the Bay of Biscay. Laughter, playful arguments, and wanting whispers flood the air, adding to the oppressive heat the suns pushes towards me in its last ditch effort of discomfort for the day. I drink up every ray as my feet dangle towards the breaking waves. All is right. The sun rays slowly crossfade into the voices growing louder as the night begins.
Nose: light strawberry, cut grass, lemon thyme. All faintly so.
Palate: bell pepper, serrano pepper, thai basil, zippy, medium-high acid, light bodied, lower alcohol. — a year ago

The nose was a fruit bomb when we first opened it. It is a little hot with alcohol. The palate is lovely. It is fantastic with prime rib. — 6 years ago
Not dissimilar to the 2008, the 2010 Viña Gravonia leaps out of the glass with a heady, intoxicating aroma of clementine, honey and smoke. And as with the 2008, the palate is a similarly rich and oxidative medley, tannic and bone-dry, with a finish that goes on for minutes. Literally: you are reminded of the wine’s presence long after your sip by a creamy, vanilla-infused aftertaste that lures you into taking another.
God, I love this wine (and, to be frank, all of those that María López de Heredia makes). It’s too young now, but that doesn’t matter. Enjoyed from a Riedel Cabernet glass with Serrano ham. This showed best (by some way) on the third night, even after a double decant on the first. For the first two nights it felt like something was being held back. It is thus imperative that these wines are decanted for some hours prior to drinking.
Once again, an incredible drinking experience. — 6 years ago
One of my favourite cava producers. Zero dosage and yet still not too austere. Went excellently with the Serrano being served. — 8 years ago

Holy sh.! Fell in love with this one. Baked apple and bakery notes, well handled oak, there is work on the lees. Creamy texture, sincere palate and amazing acidity. Would love to try in 10 years. A great discovery — 3 months ago
