✔️ Rioja, Spain
✔️ 템프라니요 70%, 가르나쵸 20%, 그라시아노 5%, 마주엘로 5%
✔️ 미듐~딥 가넷 컬러, 리치하지만 부드러운 질감
✔️ 144년 역사를 지닌 대형 오크통에서 발효한 뒤, 충분히 시즈닝된 아메리칸 오크통에서 6년 이상 숙성한 후 병입
✔️ 2시간 이상 브리딩했더니 질감이 부드럽고 향도 잘 느껴졌는데, 2010년 빈티지라 그런지 코 끝에서 과실향보다 얼씨한 삼나무•레더•토바코 향이 먼저 느껴졌고, 입 안에서 잘 익은 플럼•프룬•다크체리 향이 바닐라향과 함께 섞여서 느껴짐
✔️ 피니쉬에 후추•딜•오레가노•정향같은 향신료 꽤 강하게 향이 느껴졌는데, 이런 점이 이탈리아 와인과 달라서 매력적이었음
✔️ 로스트치킨과 먹어도 충분히 맛있었지만, 왠지 소고기나 양고기, 향신료가 강한 육류 요리와 먹어도 정말 잘 어울릴 듯함!

바디감이 단단하지만 질감이 벨벳처럼 부드러워서 넘 맛있게 마셨던 와인

시음적기가 지금부터 2028년까지라고 나와있던데, 기회가 된다면 한 병 더 장만해서 좀 더 숙성한 뒤에 소고기와 마셔보고 싶음

Possibly one of the best Cabernet Sauvignons I have had from California in the $20 range. Depth, character, body along with a symphony of dark fruit and vanilla aromas. Add that up with some silky mild tannins makes this Paso Robles cab a definite addition to my wine rotation. — 5 months ago

On the palate flavors of rich berry fruits and black currants with cacao and tobacco spice, on a well integrated frame. Fine soft fluffy tannins, long finish ending with fruit, earthy spice and tobacco cedar mineral character. Impressive! A wow factor wine! Will last for several decades! — 2 days ago

✔️ 템프라니요는 아메리칸 오크 배럴 36개월 숙성을 거쳤는데, 오픈하자마자 코 끝에 가죽향과 얼씨함이 스침
✔️ 처음엔 타닌이 뻣뻣하고 베리 향도 적었는데, 오픈하고 한 시간이 지나니 얼씨함은 줄고, 레드베리 향이 입 안에 퍼짐
✔️ 한 시간 반이 지났을 땐 다시 얼씨한 가죽 향이 올라오면서 산미가 확 느껴짐
✔️ 신기한게 두 시간쯤 지나니 갑자기 산미가 줄어들면서 레드베리 향과 시원한 허브향이 나타나고, 가죽 향 피니쉬가 느껴졌음
✔️ 블랙페퍼•정향•넛맥•발사믹 향도 다채로움
✔️ 양고기•소고기•바베큐•치즈 페어링 추천

Pauillac Red Bordeaux Blend 1986

Very deep ruby , ruby rim, shockingly young . Very closed still , mineral , creme de cassis , dark and meaty , grafite , chestnut . On the palate very tight and young , cassis with dark blackcurrant , cedar , tobacco and granite . Concentrated but balanced at the same time , gritty tannins , balanced acidity. Long and complex on the finish , with mineral , grafite notes . A great wine surely , this is so young and with huge potential. I suppose more impressive than enjoyable at this stage. This needs time in bottle, maybe come back in 5 years and will last a further 20-30 . — a month ago

The Chateau that got my wife Sofia to finally love Bordeaux (1995). Expected more from the this property in 2000. But 2000 is still either the stubborn I think it is or just not as good as critically advertised. 20 years in bottle and think it needs at least 10 more years. Also, a touch of v/a-bandaid. It has nice balance with soft fruit & earth. It just lacks the wow factor for the property & vintage. Maybe, it is in a dumb faze. But, I’ve been waiting 20 years for 2000 to come out of its shell. I love this property but it is not up to its reputation…even for lesser vintages. It might be outstanding in another 20. This bottle is a little flawed and perhaps maybe (?) a better 2nd day wine. Tonight it is leaner than I would expect. Ripe; blackberries, black raspberries, plum, dark cherries, poached strawberries. Sweet lead pencil, charcoal, volcanic ash, spice, nutmeg, some cinnamon, vanillin, dry tobacco, sandalwood, limestone, dry crushed rocks , dry pebbles, dark, rich earth w/ dry leaves, dry herbs, hints of Worcestershire sauce, moist clay, withering mid floral bouquet with excellent acidity and a wire to wire finish that is balanced, nicely tensioned and elegance that lasts minutes. One of the few slightly flawed bottles in 25 plus yrs of collecting. I can count them on just over one-hand.
