The lemonade of wines! I am a big sauvignon blanc fan, but my parents never really drink ones from New Zealand, and this made me wish I had known about it sooner. So refreshing and almost makes you pucker with how tart it is. This wine begs to be drank by the pool. Grapefruit forward, but had a grassy and herbal note that kept it grounded. Clean, acidic and crisp. I would serve this colder than class has taught me to because it is a summer delight. — a month ago

Medium lemon , hints of gold , quite a healthy colour with fine pretty persistent bubbles still . This quite intense with candied lemon peel , brioche , oyster shells , touch of porcini . On the palate this is intense ,with good volume and vibrant acidity. Buttered brioche , oyster shell , candied orange and lemon peel . Really quite lovely and intense , long and toasted brioche , chalky finish . This is at peak now , but no rush from here over the next 5 perhaps 10 years . — 7 months ago

So I started my wine collecting thing (obsession) around 8-9 years ago. This was among the first wines I bought and they have been sitting in my cellar since. I opened a bottle of this a couple of years ago and today the second one. The first bottle was obviously good quality then, but the wine was still too young: nervous and steely (chablis!). I find it beautiful to see that the first bottles are now coming around into their drinking window.

So this has fleshed out considerably and just entering it's drinking window. A rich creamy texture surrounded by lime, yellow flowers and oyster shell. Enough acidity to support the whole thing. Balanced.

Cristal Brut Champagne 2014

Medium light lemon straw colour , very fine constant bubbles . Quite restrained and mineral on the nose , with some light toasty notes , white flowers , lemon oil . Quite closed . On the palate this is really quite intense and mineral , oyster shell , chalky , limestone hints . Some lemon pith and a lightly toasty with a saline hint , fresh acidity , long and detailed , refined and very balanced . Really young still , needs time to open and will be long lived . Better in 5- 10 years and will last well a further 5-10 years — 7 months ago

Les Clos Chablis Grand Cru Chardonnay 2012

Stunning. Dauvissat perfection. 2012 Clos is perfect tonight, with more fruit definition than Preuses as expected from the site. It’s textural, chiseled and powerful with Chablisen oyster shell minerality layered in a tidal wave of spiced orchard fruit and white flowers. It’s incredibly silky on the palate showing killer volume and density with racy citrusy acids and a sea spray-like salinity to round it out. When Dauvissat is on it’s hard to beat.
