Decant and pour(lots of sediment). A medium tawny red color. On the nose: very expressive port like sweet notes with dried cherry, stewed meat, eucalyptus, cedar, herbs. Taste: silky, still fresh for its age, amazing acid wine with sour cherry, loamy soil, licorice and a peppery espresso medium plus finish. YUM! Purchased during September 2022 visit to the winery. “Billet Doux” means “Love Note” in French. 58% Semillon; 36% Sauvignon Blanc and 6% Muscat. Late harvest dessert wine in style of Sauternes. Despite being from Italy instead of California, this Cabernet has the richness of a Corison or other top Cabernet Sauvignon, but for less money. Deep intense stewed fruit to start with plum and blackberry, rich earthiness, chocolate and tobacco, then perfect tannins to finish. And aged just the right amount now to smooth out the tannins. This is the 2018 Acappella Napa Valley Cabernet Sauvignon from the Corison Winery in St. Helena, California.

On the nose there is black cherry, blackberry, plum, black currant, spice, black pepper, pencil shavings and earth.

On the palate there is black cherry, blackberry, black currant, licorice, vanilla, chocolate, spice, mint, black pepper, cedar and earth.

This bottle of the 1984 “Signature” was opened and Audouzed about an hour prior to service. It was then enjoyed over the course of three hours. The wine pours a deep garnet color with an opaque core; medium viscosity with moderate staining of the tears. On the nose, the wine is developing and was initially tightly wound but eventually opened up to reveal sensational notes of black currants, blackberries, tobacco, mixed herbs, inorganic earth and fine baking spices. In the palate, the wine is dry with medium+ tannin (still!) and medium+ acid. Confirming the notes from the nose. The finish is long. A sensational, classic, evergreen Napa Cabernet Sauvignon made by the legend herself, the one and only Cathy Corison. Drink now with some air or short decant. However, well stored examples will drink well through 2044. — 4 months ago

This is a really good Cabernet Sauvignon right? Wrong, it’s supposed to be a Cabernet Franc. Nice integrated tannins and dark fruit. I might score it higher if it had some CF characteristics. — 3 months ago

Hello from bitter cold MN. Woke up this morning to -23 degree temps and it was garbage day…. 🥶
Continuing my month of drinking 2016 wines. Almost opened Pape Clement tonight. Thoughts on if that’s too soon anyone? Smash or pass?
This is drinking very well. Has that Corison thing with great tension of fruit and acidity. Mouthwatering.

1hr+ decant. Wine really changed through the course of the night. Went from floral to port to tannic. Started out nice then evolved to complex then to strange and then went downhill. I’d drink soon and be careful of decanting too long. I was at 94 and then dropped to 91, so 92.5 and rounding up :) — 5 years ago
