Opened a few hours prior to service and enjoyed over the course of an hour. The 1996 Asili, Riserva pours a deep garnet color with a near opaque core; medium+ viscosity with no staining of the tears. On the nose, the wine is developing with lovely notes of Morello cherry, red flowers, some tar, leather, a touch of truffle, dry gravelly earth and a mix of cool and warm spices. On the palate, the wine is dry with medium+ tannin and medium+ acid. Confirming the notes from the nose. The finish is long. A great pairing with controfiletto di wagyu. Plenty of life left in this. Nebbiolo is my favorite bang for the buck wine, and this offering does not disappoint. Close your eyes and imagine the taste of a yummy Nebbiolo. This is it. Bright cherries, rose pedals, pleasing tannins. It could benefit from a few years aging, but it's hitting the spot today.
