This is a stunning bottle. What a nose. Grassy, citrus, green apple, huge and I mean huge minerality. Smoke, flint and it’s piercing my nostrils. Tiny bit of malo/butter/oak but that’s 10% of the nose. Wow that palate is awash with acids and minerals up the wazoo. With huge red grapefruit and scintillating energy. It’s got huge acid but at the same it is silky and the structure on the finish is brilliant. So long and salty. Wonderful delineation. Super long finish. The salinity on the finish is remarkable. This was a 9.4 but the finish and balance make it a 9.5. Nose is so integrated now after some air. White Burgundy mimicry going on here. Got that Burgundian stank to it. Like elite Chassagne 1er Cru. As this airs it gets an intense chewy concentration and density. It keeps gaining complexity and density. 9.5 to 9.6. — 3 years ago


Born “Dreams Come True” is a Junmai Daiginjo from Kato Kichibee Shoten in Fukui Prefecture. It’s aged for five years at –5 °C (some sources mention –8 °C). This is supposed to be one of the top Born sakes and it would be interesting to try with a couple others side by side. It’s a liter bottle and when it got opened it was on the cold side. As it warmed and opened up you can see why people call it flamboyant. It becomes a big, powerful sake with big flavors and a long finish. Heavy weight on the palate but very smooth and as they say velvety. It was nice but I wouldn’t go out of my way for it - not sure why other than maybe how it started out which was a bit sharp, angular and lean. Need to pull these earlier. — 9 months ago

Outrageous entry level Pinot Noir. Just crazy nose. The most lithe, elegant, detailed red cherry ever. A hint of dried cherry. Roses. Wow. Swiss alpine spice and green. Alpine meadow. 9.7 nose. Yowza. Palate is razor sharp with gorgeous, elegant tannins, that just short of sweet fruit thing Adank has mastered and an awesome mineral finish. Unreal stuff. — 22 days ago
