Last bottle of the ‘18. It’s pretty much at its peak. Intense limestoney minerality balanced by just enough ripe fruit green apple/citrus pith fruit. A very subtle green herbal note in the background. Round-textured in the mouth initially, u til the intense minerality puts on its geology show-and-tell. Nice acids. The 2019 Pouilly Fumé Silex shows an initial tenderness, sitting quietly and not shouting that it's made it into your glass. This is a wine that has its act together, feeling integrated and balanced with plentiful concentration and a savory long finish. Most delicious of the lineup. It really clicked for me, makes me understand how low toast oak can jive with a restrained, pristine sauv blanc character that’s the house signature.
