Most delicious of the lineup. It really clicked for me, makes me understand how low toast oak can jive with a restrained, pristine sauv blanc character that’s the house signature. Enough air coaxes out apple and a hint of ginger, but it’s that equilibrium between fruit, oak, lees and structure that strikes the match
